No. Leave the cafe out, and leave it out deliberately rather than apologetically, because this is one of the few questions in commercial scenting with a clean answer. Coffee is a strong, continuously produced, freshly generated and almost universally liked smell, and most ambient fragrance loses against it in the space around a working espresso machine. That alone would be reason enough to stop at the threshold. But there is a second reason that matters more, and it is the same reason this bank spends so much time telling gym owners not to spray over sweat: ambient fragrance layered over food and coffee does not read to a member as a nicely scented cafe. It reads as fragrance over food. It is the identical cover-up signal, arriving in the one room where people have their mouths open.

Should a gym cafe or protein-shake bar be included in the fragrance zone? No. Exclude it, and treat the cafe threshold as a hard edge of your scenting plan rather than a soft one. There are two reasons and both are strong. The practical reason is that you will lose: coffee is one of the most potent and continuously renewed smells in any building, produced fresh at the point of consumption several times an hour, and no ambient register from any manufacturer competes with a grinder and a steam wand at three metres. The more important reason is credibility. Fragrance layered over food and drink reads as fragrance over food, which is exactly the cover-up signal that damages a gym when it is applied to sweat. Is coffee smell a problem in a gym, or is it an asset? An asset, and one you are already paying for. Whey powder, banana, milk and the sweet fruit bases used in shakes produce a distinct smell that is not always pleasant, especially warm, especially at the end of a busy evening, and especially where milk has dried somewhere it should not have. That is a cleaning and equipment problem, not a fragrance problem, and no ambient machine will fix it. Blender jugs, lids, gaskets and blades need stripping and washing rather than rinsing; drip trays need emptying and washing rather than wiping; the milk fridge, the sink trap and the mat under the bar need a schedule; and the bin needs emptying, not lidding. Source, then ventilation, then cleaning, and only then scent - the same order as everywhere else in the gym.

Why an espresso machine outweighs any ambient register in the room
Think about how the two smells are produced, because that is where the mismatch is. Ambient scenting is designed to be a low, even, continuous background: a small quantity of fragrance dispersed through a large volume of air so that it is perceptible on arrival and unobtrusive thereafter. That is the whole design goal, and every good commercial machine, including ours, is built to achieve it. Coffee is the opposite in every dimension. It is generated in intense bursts at close range - a grinder releases a large quantity of volatile aromatics in a few seconds, a steam wand throws hot milk aroma into the air above the counter, and a fresh extraction is one of the most aromatically dense events in any commercial building. It happens repeatedly through the day, right where the people are, at head height, hot. Hot matters: warm air rises and carries aroma with it, so a cafe counter is effectively a small plume generator in the middle of your floor plan. Set an ambient machine against that within a few metres and there is no contest at all. What you actually get is not your register winning or losing, but a muddle: neither a clean coffee smell nor a clean fragrance, which is worse than either. And the muddle is not fixed by turning your machine up. Turning it up gives you a stronger muddle, plus a stronger machine running in a room where people are eating.

This is the reason we would exclude the cafe even if your register could win. What the cafe and the shake bar actually need, which is not a machine
Two different jobs. For the cafe, the job is containment and route. Containment means the coffee smell should be a welcome note where it is produced and should not still be hanging, stale and hours old, in the corridor to the changing rooms at four in the afternoon - which is an extraction and airflow question, dealt with practically on the companion page to this one. Route means putting your real level where members arrive and walk, so the sequence they experience is: a scented, considered arrival, then a corridor that carries it, then a cafe that smells of cafe. That reads as a well-run building. The reverse - an unscented entrance and a perfumed cafe - reads as an air freshener. For the protein-shake bar, the job is cleaning and equipment, and it is worth being blunt because a lot of owners quietly hope a diffuser will handle it. Whey protein, banana, milk and sweetened fruit bases have a distinct smell that turns quickly, and the places it accumulates are predictable: the blender jug's gasket and blade seat, the underside of the lid, the drip tray, the milk fridge shelf and door seal, the sink trap, the bin, and the rubber mat the bar stands on. Every one of those is a rota item, and none of them is a fragrance item. Rinse is not wash. Lidded is not emptied. Wiped is not cleaned. What if our cafe is right in the middle of an open-plan club with no walls?
Then you have a connected-air problem rather than a zoning problem, and the honest answer is that you cannot fully exclude it, so you plan around it instead. Put the machine at the far end from the counter, at the arrival, so that the highest concentration is where members come in and the level has already fallen off substantially by the time air reaches the cafe. Accept a lower overall setting than you would run in a club with a separate cafe, because whatever you set will reach the counter at some fraction. And judge the result standing at the counter, at the busiest cafe hour, having come in from outside. If you can smell your register and the coffee together at the till, you are too high, and the answer is to come down a step rather than to move the coffee.
Could we use a coffee-inspired fragrance in the cafe so it agrees rather than clashes?
We would not, for two reasons. The first is that SOSA does not publish a coffee register - the seven hotel-inspired registers are white tea and bergamot, white tea and aloe, cedarwood and vetiver, amber and violet, jasmine and green tea, citrus and sandalwood, and citrus with pepper and amber - and we will not describe a note that does not exist. The second is that even if such a thing existed, an artificial coffee smell sitting next to real coffee is the worst version of this problem rather than the solution to it, because the member's nose has an immediate reference sample in a cup in their hand. Real coffee beside imitation coffee is instantly legible and it makes the real one taste worse. Let the beans do it.
Our members say the cafe smell drifts into the changing rooms. Is fragrance the fix?
No, that is an airflow and extraction question and fragrance would make it worse rather than better, because you would be adding a third smell to a corridor that already has two. What you want to look at is where the cafe's air goes: whether there is dedicated extraction over the counter and the cooking or blending point, whether it runs whenever the cafe is open rather than on a switch somebody forgets, whether the corridor to the changing rooms has both supply and return rather than only one of the two, and whether a door that used to be closed is now propped open for convenience. Fix the path and the drift stops. What we will never suggest, in any phrasing, is reducing fresh-air exchange anywhere in a gym so that a fragrance holds longer - in a building full of people breathing hard that would be indefensible advice.
Is there anywhere in the cafe area that can be scented?
The approach to it, yes. If your cafe sits at the end of a corridor or off a reception, the corridor and the reception are legitimate and useful places to hold your register, and members will experience a scented arrival flowing into a room that smells of coffee, which is a pleasant and entirely honest sequence. What we would avoid is anything inside the seating area itself, anything on or near the counter, and reed diffusers on cafe tables, which look charming and put fragrance directly beside food. If you want something in the seating area, put it in the lighting, the materials and the ventilation instead. A cafe that is well extracted and properly cleaned smells good on its own.
We already installed a machine in the cafe. What should we do now?
Move it rather than turn it down, if the room allows. Relocating it to the arrival end or into the reception gives it a job it can actually do and removes it from the contest it cannot win, and it costs nothing but an hour.
