The four things that clear cooking smell, and the one that never does

The hood
Run it on well past the end of the demonstration
The air in the demo area at the moment the hob goes off is full of what was cooked, and so is the air in the corridor the chef's guests are standing in. If the hood stops then, all of that stays where it is and drifts across the floor. Fresh air
A recirculating showroom moves the same smell round and round
Most premium showrooms are sealed, glass-fronted boxes on full recirculation, which is excellent for the temperature and useless for a cooking smell. Recirculation takes the demo's air, cools it and sends it back across the sales floor. The fix is to admit outside air during the clearing window by whatever the building allows: a fresh-air setting on the plant, a door to a service corridor or the back store propped open, a window if there is one. Twenty minutes of exchange does what an afternoon of recirculation cannot. If the building offers none of these, the clearing window is longer and the hood does more of the work; the answer is never to add something to the recirculated air. The waste
Cloths, food, oil and the bin liner leave the building
The last hiding place is the one under the counter. A demo produces food waste, the oil from the pan, the cloths that did the wiping and, quite often, the packaging the ingredients came in. If any of that goes into a bin inside the demo area or the back store, the showroom now has a small, permanent source of cooking smell that the hood is not pointed at and the AC distributes gently across the floor overnight. The fix is that everything the demo produced leaves the building at the end of the clearing routine: waste out, oil out, cloths out or washed, liner changed. Your problem is a thing that is already in the air, and the only tools that take things out of air are a hood, an open door, a cloth and a bin.
