The next generation wants the shop to feel like their decade; the customers of twenty-five years want to walk into somewhere they recognise.

Scent is unusually useful in that argument precisely because it is the one change nobody audits. New signage, new counters, new uniforms - regulars register each of those instantly, and a proportion of them experience it as loss.
