Of all the rooms in this cluster, a bar is the one where I am most often about to be outbid by the client's own product. A bartender expressing a lemon peel over a coupe glass is doing something no diffuser can improve on, at a distance no diffuser can match, and it arrives at the guest's face at the exact moment they were promised it would.

That aroma is a working part of the bar's product, just as the dish on a plate is the diner's. So the counter, the stools and the back bar are unscented - not lightly, unscented - along with every table, and no machine goes where its output can reach a counter or a table. There is a second consequence, and bar operators tell me it is the most useful line here: your bar's own aromatics set the ceiling on your level everywhere nearby. Whatever you run in the approach has to sit clearly below the citrus coming off the counter, because if a guest meets your fragrance more strongly than the drink in their hand, the handover has run backwards. Let the bar cap your level
Your number is set by the citrus coming off the counter, not by the foyer's size
Stand in your foyer at eight o'clock with the bar in full swing and you will smell the bar from there - lime, grapefruit, mint, whisky, sometimes a torched herb. That is the loudest honest smell in the building and it belongs to the product. So set your approach level below it, deliberately, and check it by walking from the door towards the counter: the fragrance should fade as the drinks grow, not the reverse. If a guest arriving meets your composition more clearly than the glass they are handed, you have inverted the sequence. In practice this means a bar-and-restaurant runs a lower number than the same footprint with no bar in it, which is the opposite of what most operators assume.
Tip: Walk door to counter twice, once at opening and once at nine. If the fragrance still leads at nine, it is too high.

The bar outlives the kitchen, and the late room is a different room
Most restaurants get one schedule. A bar-and-restaurant needs two, because at midnight the building changes: more people per cubic metre, the door opening every few minutes, guests coming back in from the pavement, and a foyer that has turned into the room people leave through rather than arrive through. A level that reads as a clean arrival at seven reads as heavy at one in the morning, on top of everything else in the air by then. So set a dinner window and a lower late window on the app timers, write both numbers on a card by the machine, and put the key-lock on so the change happens on the schedule rather than on somebody's judgement at half past midnight.
Tip: Set the late level with the doors propped and the room full, which is the only condition that matters.

Citrus waste, drip trays, the ice-well drain and a soaked counter edge
A bar generates a specific odour inventory and none of it is a fragrance problem. Spent citrus in an under-counter bin goes sour within hours in a warm service well. Drip trays and rail mats hold sugar and juice. A glasswasher that is not descaled develops its own smell, and so does an ice-well drain that runs to a gully rather than a trapped waste. Spirit and sweet vermouth soak into a timber counter edge and stay there. Every one of those is a cleaning interval or a plumbing fix. A bar is an aromatic workshop.
