Every zoning conversation I have with a restaurant starts with a drawing and ends with a roll of tape. A floor plan shows you where the architect put the walls; it does not show you where the air stops, and fragrance only obeys the second of those. This is the method I use to find out, and it is the same method whether your building is a terrace with a lobby or a courtyard with a gallery.

A 6,200 sq ft restaurant can be 1,400 sq ft of terrace that contributes nothing, 2,300 sq ft of unscented dining, 900 sq ft of kitchen and a 300 sq ft private room - leaving a 320 sq ft foyer, a 260 sq ft waiting lounge, 140 sq ft of corridor and a 110 sq ft washroom lobby. About 830 sq ft, or 231m³ at 3m, which one Vaayu at ₹11,999 covers running low - and if the tissue disqualifies the foyer, a ₹849 reed.
The short answer
Short answer: by air boundaries rather than by floor-plan lines. Walk the building with tape and a strip of tissue, mark where the air genuinely stops, and then cross off in three passes: everything unbounded, everywhere people eat, and everything whose air moves towards a place where people eat. What survives is the scented envelope. Measure it in cubic metres, count how many separate volumes it is, and buy the smallest source that holds a level in each.

Walk out to every open part of the building and write it off before you think about anything else: the terrace, the courtyard, the roof deck, the section behind a frontage that folds open, a pergola or cabana with no walls that close. Ambient scenting needs bounded air, because what reads as a level is a balance between what a source releases and how fast the volume exchanges with somewhere else - and these spaces exchange with the sky. Then find the edge properly rather than assuming it: walk in from the open side with the back of your hand at shoulder height and feel where the conditioned air gives out, and put tape on the floor there. In most of these buildings the real edge is two to four metres inside the frontage.
Tip: Do pass one on a windy evening. A still evening flatters the building and gives you an edge that is not there tomorrow.

Pass two: cross off everywhere people eat
Dining is an exclusion, not a level to be tuned
Cross off the dining room, the chef's table, any tasting-menu room, the bar counter and its stools, a private dining room while guests are seated, a banquet hall whenever food is served in it, and any canapé or welcome-drink station in a foyer. These are not zones running at a lower setting; they are excluded, and the reason is that a seated guest cannot walk away from anything in the air for two or three hours, while the dish in front of them is the composition they paid for. No machine goes anywhere its output can reach a table, and if the only mounting position your building offers does, the honest answer for that building is to scent nothing at all.
Tip: Mark the exclusions on the plan in pen before anybody quotes you, and take a photograph of it.

Pass three: cross off everything upstream
A foyer that vents towards the tables is a dining-room position with a foyer's name
This is the pass that decides whether you buy anything, and it is the one almost everybody skips. Hold a strip of tissue at nose height at every surviving threshold during service and watch which way it leans, then repeat it at the busiest hour, because the kitchen's extract is the strongest air mover in the building and it pulls harder as the line comes on. Any volume whose air moves towards a room you crossed off in pass two is out of the plan, whatever the drawing says and whatever level you were planning to run. I have learned to answer it by asking for something nobody expects to be asked for: photographs of tape stuck to their own floor. A drawing tells me where a designer decided a room should end. It tells me nothing about whether air stops there, and fragrance only obeys the second thing. SOSA reed diffusers are alcohol-free and phthalate-free, with 50ml lasting about 6-8 weeks and 130ml about 14-18 weeks. Cold-air refill oil for the Vaayu is not currently sold separately - the machine ships with 400ml included and further refills should be confirmed with SOSA. Warranty, annual maintenance, installation and bulk terms are not published and should be confirmed before ordering. Ambient scent is an interior and hospitality decision: it makes no clinical, therapeutic or wellbeing claim, it works alongside proper extraction, grease management, drainage, cleaning and air change and is never a substitute for any of them, it is never used to mask or remove another smell, and no claim is made that fragrance influences a guest's decision or any commercial outcome. Dining rooms, chef's tables, tasting-menu rooms and food-preparation areas are left unscented, no machine is placed where its output can reach a table or a pass, no fragrance is described as food-safe or safe for use around food, and the operator's own kitchen consultant and local food-safety and fire authority govern anything sited near a kitchen. Fragrance oil is flammable and is kept away from open flame and heat. The chef's judgement overrides any scenting plan in their own room. The hotel-inspired scents are SOSA's own original interpretations; SOSA is an independent brand and is not affiliated with, or endorsed by, any hotel named for reference.
