Owners ask this as if there were a line on the floor the fragrance could be told not to cross. There is no such line. Air does not respect tape. What you can build is a gradient - full at the desk, faint in the corridor, nothing at the counter - and the whole method is deciding where the source sits, which way the air moves, and where you stand when you set the level.

By accepting that you cannot draw a line and then building the next best thing, which is a slope. Fragrance released into a floor spreads through all of the floor's air eventually, so the question is never "how do I stop it reaching the counter?" but "how do I make sure that by the time it gets there, there is nothing left to smell?" Four things make that slope. Distance. Fragrance concentration falls quickly with distance from a single source, and the further the reception desk is from the demo counter, the more room the fall has. Put the source at the reception end of the floor and nowhere nearer. Airflow. On most floors with a live kitchen the sales-floor supply moves air from the front of the store toward the back, and the hood at the back pulls it in. Use that: a source high on a reception-side wall the supply crosses sends its output on a journey that ends at the hood, where it is removed - and where the machine goes with a live kitchen chooses the wall. Enclosure. If the demo area has a door, a glass screen or a sliding partition, it stays closed on quiet days and the gradient becomes almost a boundary; if it has an open front to the floor, the gradient is all you have, and the level has to respect that. Distance
The one variable you get for free - use all of it
Concentration from a single source falls away fast with distance, and every metre between the reception desk and the demo counter is a metre the fragrance has to travel and thin out across. So the first decision is the cheapest: the source goes at the reception end, at the far extremity of the floor from the counter, and not one display nearer. Owners often want the machine "central" so the floor is even; on a floor with a demo area, even is the wrong goal. You want a slope, and a slope needs its high end as far from its low end as the building allows. On a long, narrow floor this is easy. On a square one with the counter near the middle it is hard, and the honest answer may be a reed at the desk and nothing else - the 500 sq ft studio and the 1,000 sq ft decision both come to that conclusion for floors where the kitchen is close.
Rule: the source sits at the far end from the counter. If that end has no socket, run a cable; do not move the machine.

Airflow
Let the AC carry it toward the hood, and let the hood take it
Distance thins the fragrance; airflow decides which way it travels while it thins. On most appliance floors the sales-floor supply grilles push conditioned air across the displays and the extraction hood at the kitchen pulls air toward itself when it runs, so the net movement on a quiet day is from the front of the store toward the kitchen. A source high on a reception-side wall that the supply crosses rides that movement: the fragrance is carried across the corridors, weakens as it goes, and what reaches the hood is removed. That removal is the plan working. The mistake is a source on the kitchen side of the supply path, or on the kitchen's own supply, which delivers fragrance to the counter before it has had any distance to thin across. A door or a screen, if you have one, is the gradient's best friend
Some demo areas are open to the floor; some sit behind a glass screen, a sliding partition or a proper door. If yours has any of these, use it. A closed door turns the gradient into something close to a boundary on quiet days, because air exchange through a shut door is a fraction of air exchange across an open front, and the demo area becomes its own small volume with its own air. Keep it closed when the counter is idle and the machine is running; open it for demonstrations, when the machine is off anyway. Two cautions. A door does not license a higher setting on the floor - the level is still set so that the counter smells of nothing with the door open, because doors get left open. And never treat the door as a reason to place anything inside the demo area on the grounds that it is "sealed off"; it is sealed off from the fragrance, which is the point.
Rule: set the level with the door open, then keep the door closed. Never the other way round.

The level
Set it standing at the counter - the reception gets what is left
This is where most gradients fail, and it fails in the order the test is done. If you set the intensity at the door so that the entrance smells the way you imagined, the counter gets whatever that setting sends it, and it is usually something. Reverse it. Run the machine at a low setting for an hour on a quiet day, walk to the demo counter, and breathe. If you can name anything - cedar, lemon, anything at all - the setting comes down and you wait another hour. When the counter smells of nothing, walk back to the desk: that is your reception level, and it is the only honest one. On a long floor it will be a clear, quiet register at the desk. On a short floor it may be almost nothing, and that is the floor telling you it is one room with a kitchen in it. The adjustable intensity on the Vaayu is how the setting is found; the key-lock is how it stays found, because the person who did the counter test is not the person on the floor at five on a Saturday. Everything above is about ordinary afternoons, when the counter is idle and the fragrance is allowed on the floor. The moment the counter is in use, the gradient is irrelevant, because the whole floor's machine is off. Not off at the kitchen end and on at the desk; off. A floor is one connected volume of air and the desk's fragrance reaches the counter door within minutes - whether fragrance can interfere with food aromas explains why even a trace is too much while food is cooking. So the gradient and the timer are a pair: the wall and the setting decide what the counter smells of on a Tuesday, and the 1h/4h/8h/24h timer, the app or one press decide what it smells of on demo day, which is only the demonstration. Demo days versus regular days writes the two windows out as two schedules. I am asked for a boundary and I can only offer a slope, so I try to say that early. Fragrance goes where the air goes, and the air on your floor goes everywhere eventually. What I can do is make sure that by the time it arrives at your demo counter there is nothing left of it to notice - by putting the source as far from the counter as the walls allow, by letting your air-conditioning carry it toward the hood rather than away from it, by keeping a door shut if you are lucky enough to have one, and above all by setting the level from the counter and not from the door.
That last point is the one I would put on the wall of every showroom with a demo area. The level is found by standing where the fragrance is not allowed to be and turning it down until you cannot smell it there. The reception then gets whatever that leaves, and on a long floor that is a perfectly good register at the desk. On a short floor it may be almost nothing, and the honest response is a Mountain Breeze reed at the desk instead of a machine, because a reed reaches one desk and stops.
