Count zones, not tables
A "zone" is simply a distinct pocket of air that behaves as its own space. In a villa living room you can usually find them by standing at the door and noticing where the room changes character: the main seating cluster is one, the dining end another, the double-height void a third, the entrance sightline a fourth. Walls are not required — a change in ceiling height, a wide opening, or a run of glass doors is enough to make air behave differently on either side. Each of those pockets is what you scent, and each wants one machine that can own it, not three that overlap in the middle and leave the edges bare.
This is why the honest answer to "how many" is almost always smaller than people fear and better than what they were doing. A single villa living room might be two zones, occasionally three. The rule of thumb
If you want a number to start from, here is the one I give clients. Treat any connected pocket of air up to roughly 1000 cubic metres as a single Vaayu zone; step to an Aangan when the whole floor is open and you would rather scent it as one continuous space than manage separate machines.

Why fewer, stronger units win
There is a real temptation, faced with a big room, to solve it with quantity — to buy several inexpensive diffusers on the theory that more machines means more scent. In practice it produces the opposite of what you want. Each small unit creates an intense little bubble around itself and contributes almost nothing beyond it, so a guest walking through experiences a series of on-off gusts rather than one calm, continuous atmosphere. It is also more to refill, more to clean, more to fail, and more clutter on surfaces you chose carefully. A single machine with genuine reach gives you the smooth, even wash of scent that reads as luxury precisely because you cannot locate its source.
