Frying does not simply release a smell into the air. Hot oil breaks up into an aerosol - microscopic droplets of cooking fat, carried up on the steam and the convection current rising off the pan - and those droplets travel wherever the air travels. The droplets are far too small to see and far too light to fall like crumbs, so they drift until they meet something cool or something soft, and then they stay there. Curtains, sofa fabric, cushion covers, throws, rugs, dining chair upholstery, and a thin invisible film on walls, ceilings and cabinet fronts. That film is the entire story. By the time you sit down after dinner the air itself has largely cleared, and the smell is still in the room because it is no longer in the air at all. The oil is a deposit, not a cloud
It settled on your things within minutes and stayed
A cooking odour has two lives. The first is airborne and short: volatile compounds from the food, plus the oil aerosol still in suspension, all of which good extraction and a cross-breeze will clear in well under an hour. The second is deposited and long: the fraction of that aerosol that reached something and stuck. Soft, fibrous and porous materials catch the most, which is why fabric is always the problem and glass almost never is. Cool surfaces catch more than warm ones. The question I am asked more than any other is some version of this one. The house is clean, the windows were open, and it still smells of dinner at bedtime. People assume it is a ventilation failure or a housekeeping failure. It is neither. It is physics, and once you know the physics the answer stops being mysterious.
