Everybody gets the yes right. Where showrooms come unstuck is the timing either side of it, because pressing a button is instant and a room full of air is not. Off at the moment the hob lights is barely off at all, and on again as the last guest leaves is worse than leaving it off all evening.

Stop treating off as instant

This is the mistake underneath the other two. When you press off, production stops and nothing else does - every bit of fragrance already dispersed through the volume is still there, and it leaves at the speed your building moves air, which on a still afternoon with the doors shut can be slow. A showroom that switches off as the demonstration starts has effectively not switched off for the first part of it. When somebody asks me this, they have usually already decided the answer is yes and are really asking for permission, or for a rule they can hand to a team. The yes is not the interesting part. In every showroom I have talked through this with, the machine did get switched off - it just got switched off at the wrong moment, which is the moment the cooking started, and switched back on at the other wrong moment, which is the moment the guests left. Both feel completely natural and both undo the point of the exercise.
The thing to hold on to is that a machine stopping does not empty a room. What is already in the air leaves at the building's pace, through your extraction and your air handling, and the same is true in the other direction after the cooking. So the sequence is off early, off throughout, off well past the end, and back on only when the space genuinely reads as neutral to somebody who has been outside. I will not give you a number of minutes for that, because it depends on extraction and air change that your HVAC contractor can calculate and I cannot, and a number I made up would be worse than no number at all. One standing note while I am here: whatever runs on the ordinary days should contain nothing edible.
