Your instinct is right and I am going to push it one step further than you did. A sixth bottle probably does add nothing. So does a seventh thing in the same category bought in a different shape, which is what a set of three would be. The question worth asking is not which perfume to buy. It is whether a perfume is the gift at all.

Straight answer
Can you build a set of three around contrast instead of similarity?
Not this one, and the more useful answer sits behind that.

Why the set cannot do it. The three-attar set is fixed: Ameeri, Nawaab and Mastani, in one size tier at a time, nothing swapped in or out. The hardest fragrance gift is not the one where you know nothing. It is the one where you know just enough. You can name the bottle they have worn for six years. You also know that buying it again is not a gift, it is a refill - and that buying something wildly different is a coin toss with your money on it.

So people reach for a set, and most fragrance sets quietly mislead. They are sold as exploration when they are really one house's single idea, broken into three bottles.
