Understand what adaptation hides

Adaptation is usually described as a problem for owners - you cannot smell your own store - and it is. What gets missed is that it happens to the customer too, and on a long visit that is the more interesting half. Twenty minutes in, they are no longer registering the fragrance; sixty minutes in, they are still in it. That is why silence from customers is not evidence that a level is correct, and why the only useful readings in the building come from people arriving cold or from staff at the end of a shift. Run the hour test properly
Sitting is the test - standing and walking about will tell you nothing
Choose an ordinary trading day and sit at the case for a full hour at the setting you intend to keep, with the door working as it normally does and the air-conditioning on its usual schedule. Do not walk out and back in, because that resets your nose and turns the test into a different one. At minute forty, ask a single question: am I aware of a fragrance, or of a room somebody looks after? The second is the target. If you are still aware of a fragrance at minute forty, the setting is too high, and one step down usually solves it. Repeat the test whenever the season changes, because drier or warmer air makes the same number read differently.

Levels in a shop only ever drift in one direction
A floor has many hands. Somebody opens up on a slow morning, thinks it smells of nothing, and turns it up - which it does, to them, because they were in it yesterday. A week later somebody else does the same. Nobody in the history of retail has ever walked in and turned a diffuser down.
