A live kitchen is the most expensive thing on an appliance floor, and the moment a chef lights the hob it starts producing the one smell you actually want a visitor to remember. The rule
The demonstration owns the air while it runs
Start with what the live kitchen is for. A visitor who has spent an hour comparing induction hobs on a specification table is taken to the kitchen so that a chef can show them what the hob does, and the most convincing part of that is the smell - onions in butter, bread, a sauce thickening on the flame. That smell is the demonstration. If the air already carries cedar or lemon, the visitor does not smell the demonstration; they smell a mixture, and a mixture is what the memory keeps. So the showroom's fragrance stops at the edge of the demo zone in space and stops altogether in time while the demo runs. This is not a lower setting inside the kitchen - there is no setting at which cedar under frying butter is better than either alone. Rule: if a visitor could smell the showroom's fragrance from the chef's side of the counter, the machine is in the wrong place or on at the wrong time.

With a kitchen on the plan, the wall the machine sits on is decided by the hood, not the socket. Put the source on the reception side of the floor, on the far wall from the extraction hood, high enough to clear the partition line, where the AC supply will carry it across the displays and away from the kitchen. A running hood pulls air toward itself; a machine near it is feeding the extract duct, and a machine on the kitchen's supply side is delivering fragrance into the one zone that must not have it. A wall or HVAC mount - both of which the Vaayu allows - is what makes that wall available. Never place anything inside a display kitchen, live or not: a small enclosed set over-scents in minutes. Off before the chef starts, on when the air smells of nothing
The machine has two run-windows: ordinary trading hours, and none. On a regular day it runs on the 1h/4h/8h/24h timer from opening to close at the level the team set. On a demo day it is off before the first pan goes on the hob, and it stays off through the demonstration and through the clearing afterwards. It does not come back on when the demo ends; it comes back on when the room smells of nothing, which is a test you do with your nose from the reception desk, not a time on a clock. Extraction
The hood clears the room - fragrance never does
After a demonstration, the room smells of what was cooked. That is the hood's job to remove, with time and a wipe-down and the bins out, and fragrance has no part in it. A scent machine adds; it does not subtract. Turned on over the smell of frying, it produces a third smell that is worse than either, and it does so at a level the advisor then breathes for the rest of the afternoon. So extraction during and after, fresh air if the plan allows it, and the fragrance returns last, once the air is neutral. Nothing edible in the air, ever, because the hob owns it
Every kitchen-appliance showroom has one exclusion the rest of retail does not: nothing edible in the register. No vanilla, no coffee, no caramel, no bakery, no warm spice - not because they are bad scents but because the hob and the coffee counter own those smells, and a visitor who smells coffee from the reception should be smelling your coffee machine, not your diffuser. The question I get from showrooms with a live kitchen is usually asked apologetically, as if the kitchen were a problem for the fragrance. It is the other way round. The kitchen is the point of the building, and the fragrance is a piece of interior finish that has to know its place. When a chef puts butter in a pan, that is the best-smelling minute your showroom will have all day, and I would rather my machine were off for it than have a visitor remember cedar and butter together. So the answer is yes, use commercial fragrance - on the floor, from the reception side, and at no time the kitchen is working.
Practically, that is a wall, a timer and a hood. The Vaayu sits high on the reception wall, as far from the extraction as the plan allows, and runs on its timer through a regular day.
