A showroom with a coffee counter is running a tasting, whether or not it calls it that. A visitor is handed a cup and asked, in effect, to notice what this machine does to a bean. Almost everything they will notice arrives through the nose, which makes the coffee counter the one place on the floor where a fragrance is not merely unwelcome but actively in the way of the demonstration. The live kitchen has the same rule for the same reason. Neither is scented, on any day, at any level.

Yes, and I want to separate the two zones, because they arrive at the same rule from different directions and the coffee counter's direction is the stricter one. Take the live kitchen first. When a chef sears something on the demo hob, the smell that fills the room is the product working, and whether fragrance can interfere with food aromas explains what happens when a fragrance is in that air at the same time: the visitor smells a composite, not the demonstration. Here is the fact that makes the coffee counter the strictest zone in the building. The tongue detects a handful of basic tastes; everything a visitor calls the flavour of a coffee - the fruit, the chocolate, the roast, the particular thing this machine did to this bean - is aroma, and it reaches the nose from inside the mouth as they drink. That pathway is open to the room as well. A trace of cedar or lemon in the air at the counter is carried into the same passage and read as part of the cup, and the visitor tastes a coffee with something odd in it that they cannot name. The moment a grinder runs, the smell of freshly ground coffee fills the air around the counter, and that smell is the machine's best argument. It is why people stop. It is also brief and fragile: it fades within minutes, and any other smell present at the same time takes the edge off it. I am a perfumer, and I will tell you what a perfumer knows about coffee: it is the hardest thing in a building to keep a fragrance away from, and the thing that most deserves it. When somebody drinks, the aroma of what is in the cup goes up the back of the nose, and so does whatever is in the air around them. A cedar note at a coffee counter is not an atmosphere; it is an ingredient, and nobody chose it. That is why I treat the coffee counter as stricter than the live kitchen. The kitchen needs the machine off while a chef works. The counter needs the machine never to have been within reach of it.
So the plan for a showroom with both is drawn with both as walls.
