I sell scent machines and I am going to answer this in one word, because the long answers are the ones that end in an invoice. No. A scent machine cannot remove cooking odours, after a demonstration or at any other time, because it has no mechanism for removing anything. It puts a smell into a room. That is the whole of what it does.

Five things a scent machine cannot do, and what does them
The question gets asked because suppliers answer it loosely. Here are the five things a showroom actually needs done to cooking odour, what does each, and why a scent machine is not on the list for any of them.

Extract
Only a hood puts the demo's air outside - a nebuliser puts more into it
The first thing cooking odour needs is to leave the building, and the only device on the floor that does that is the extraction hood, ducted to the outside. It takes the air around the hob - smoke, steam, the fine mist of fat - and puts it out through the wall or the roof. A recirculating hood does something different and weaker: it passes the air through a charcoal filter and returns it, and the filter has a finite life, after which it returns what it was meant to hold. A scent machine does neither. It has no duct and no filter. What it has is a reservoir of oil and a mechanism for getting that oil into the air. Ask a supplier who says their machine removes odour to point to the part of it that air leaves through. Only outside air replaces smelly air - fragrance recirculates with it
The second thing cooking odour needs is dilution by air that does not smell of cooking, which means outside air. A sealed showroom on full recirculation moves the same air round and round, cooled and returned; the smell goes nowhere. A fresh-air setting on the plant, a door to a service corridor, a window in the back store - these bring in air that has never met the demo, and twenty minutes of that does what an afternoon of recirculation cannot. A scent machine on a recirculating floor is simply another thing in the loop: its output goes round with the frying, and the AC delivers the composite evenly to every display. Clean
Only a cloth removes the fat - and the fat is where the smell lives
The third thing is the one a scent machine is furthest from. Cooking, especially frying and searing, throws a mist of fat into the air that lands on every nearby surface: the hob, the counter, the splashback, the underside and front of the hood, the demo stools, the nearest display fronts. That layer is a reservoir. It keeps releasing smell for hours after the air has been extracted and exchanged, which is why a floor that smelled of nothing at closing can smell of yesterday's demo at opening. The only thing that removes it is a wipe-down with a degreaser suited to the finish - and the finish is the brand's care guidance to follow, not mine. A scent machine cannot wipe anything. Test: if a clean cloth along the front of the hood comes away with anything the morning after, no machine on earth was going to fix that.

Masking is a third smell, not a clean room - and it costs the floor team
The fourth thing a showroom needs is for the visitor arriving after the demo to meet either the register or nothing, never a mixture. This is where the supplier's answer usually turns: "the machine will not remove it, but it will cover it." It will not. The nose does not receive two smells and choose the nicer one; it reports one composite, and cedar-and-frying is a smell in its own right, and not a good one. To notice the cedar at all over the food, the machine has to be run at a level well above the quiet-day setting, and that level is what your advisors then breathe until closing; the next day someone leaves it there, and the floor is now over-scented on quiet days too. So masking costs you three times: a worse smell today, a drifted level tomorrow, and a team who have learned that the answer to a smell is more smell.
