Most scent machines end up where the electrician left a socket. On an ordinary floor that is a small mistake. On a floor with a live kitchen it is the mistake, because the wall the machine sits on decides whether the kitchen ever smells of your fragrance. The machine goes on the reception side, high, on the wall furthest from the hood, and on the sales floor's own air - never the kitchen's.

The hood
A running hood pulls - anything near it is feeding the extract
Start at the kitchen and work outward. An extraction hood, when it runs, draws air from the room around it toward the canopy and up the duct, and it does not care whether that air carries onions or cedar. A scent machine within the hood's reach is therefore a machine whose output goes straight out of the building; the floor smells of nothing, someone turns the dial up, and the moment the hood stops the kitchen receives everything the machine has been putting out at the higher setting. So the first rule of the plan is a radius drawn around the hood in which nothing is placed. On a quiet day, with the hood off, the same zone should still be empty, because the hood side of the floor is the kitchen side, and the chimney and hob showroom explains why a running hood stripping scent from its own zone is the plan working, not failing.
Rule: if you can see the hood from where the machine is, the machine is on the wrong wall.

The kitchen's supply
Never on the duct that feeds the demonstration
Some live kitchens are served by their own conditioned supply or their own make-up air, brought in to replace what the hood removes. Find that grille on the plan, and find the duct behind it, because a source anywhere on that path is delivered into the kitchen. This is the mistake that a socket-led installation makes most often: the machine is mounted on a convenient wall near a grille without asking which zone the grille serves. For an HVAC-mounted machine the rule is absolute - the duct must serve the sales floor alone, confirmed by whoever maintains the plant - and for a wall-mounted one it means the source sits where the sales-floor supply, not the kitchen's, will pick it up. Where the machine goes on a central-AC floor gives the general rule; a live kitchen is the case where getting it wrong is most visible, because the first person to notice is the chef.

With the hood radius and the kitchen's supply ruled out, the machine belongs at the other end of the floor: the entrance approach, the reception desk, the first displays. This is where a visitor meets the fragrance, and it is where the register should be noticed and then forgotten. It is also, usefully, the end of the floor from which the sales-floor supply tends to carry air toward the kitchen and the hood, so the fragrance travels across the displays, weakens with distance, and is finally removed at the one point on the floor where you want it removed. Height
Above the partition line, or the fragrance pools behind a plinth
Appliance floors are full of low walls: display islands, plinths, half-height partitions between kitchen sets. A source at desk height on the reception side sits behind one of these and its output pools in a pocket instead of joining the supply air, which is why so many "weak" machines are simply low. Mount the source above the partition line, high on the wall, where the supply air crosses and can carry it. This is the reason the mounting options matter: a freestanding machine can only be as high as the furniture, while a wall or HVAC mount can be as high as the plan needs. Displays and partition walls covers the same problem on floors without a kitchen; with a kitchen it also decides how quickly the floor clears once the machine goes off, because fragrance that pooled behind a plinth lingers after fragrance in moving air has gone.
Test: stand at the far end of the sales floor with the machine running; if you smell more at the desk than in the corridor, the source is too low.

The socket
The wall is the decision - the socket is a cable
The last feature on the plan is the one most installations start with, and it should come last. A socket is a cable run; a wall is a choice about air. If the right wall has no power, the answer is a cable to the right wall, never a machine on the wrong one. The Vaayu runs on DC 12V at 5W - about 1.5 units of electricity a month on a ten-hour day - so the run is a small one. And once the machine is on the right wall, two more things keep it there in practice: the key-lock, so nobody responds to a quiet corridor by turning it up, and the timer and app, so it is off while the kitchen works whatever wall it is on. When a showroom sends me a photograph of their new machine, I can usually tell within a second whether an electrician or a plan chose the wall. The electrician's wall is at shoulder height beside a socket, quite often within sight of the hood. The plan's wall is high, on the far side of the floor from the kitchen, and looks slightly inconvenient. The inconvenient one is right. On a floor with a live kitchen the machine has one job on a quiet day, which is to put fragrance into air that is moving away from the kitchen, and the wall is the whole of that job.
So mark the hood, mark the kitchen's own supply if it has one, mark the sales-floor supply and the return, and then rule walls out. Not near the hood, because the hood will eat the output and someone will turn the dial. Not on the kitchen's supply, because that is the one duct that ends in the demonstration. Not in a display set.
