Find out what it actually is first, because existing shop smells fall into three categories and only one of them is the asset you think you are protecting.

Should a shop keep its existing smell? It depends what it is. A smell that comes from your stock or materials is usually an asset worth protecting. A smell that comes from damp, drains, old upholstery or a store room is a maintenance problem, not a heritage.

How do we find out which it is? Ask staff and regular customers what the shop smells of, and ask somebody who has never been in to describe it. Owners cannot smell their own premises after the first week.

Can we add fragrance to an existing smell? Only if the existing smell is clean and intended. Adding a fragrance to a maintenance smell produces a mixture that is worse than either, and it reads as covering something.

Commercial scenting goes wrong in a predictable order: somebody buys a machine to cover a smell that has a source, puts it where the socket is, runs it at full intensity because day one felt weak, and ends up with a room people comment on for the wrong reason. Straight answer
Should a long-established shop keep the smell customers associate with it?
Establish what it is before you decide, because the three possibilities call for three different answers. Kind one: it comes from your stock or your materials, and it is an asset. A textiles business smells of cotton and dye. A jeweller's workshop has a faint metallic note. A shop that sells wooden furniture smells of wood, and customers have associated that with you for thirty years for good reason - it is evidence of what you sell and it cannot be bought. Protect it. Adding a fragrance over it is the mistake here: the stock smell is doing work that no product can replicate, and a composed fragrance competing with it produces a mixture that reads as neither. Damp in a back wall, a dry trap, old upholstery that has absorbed decades of air, a store room that is never opened, a mop cupboard. Fix it. Ventilate, clean, replace what has absorbed, and only then consider anything scented. The generational handover is the most delicate brief I get, and the fragrance is never the difficult part. The difficult part is that the person redesigning the business and the people who made it successful want opposite things. The next generation wants the shop to feel like their decade; the customers of twenty-five years want to walk into somewhere they recognise.

Scent is unusually useful in that argument precisely because it is the one change nobody audits. New signage, new counters, new uniforms - regulars register each of those instantly, and a proportion of them experience it as loss. A restrained scent is felt rather than itemised, which is why it modernises without appearing on the list of things that are different now. Choose something the founding generation would not object to. That constraint produces a better choice, not a compromised one.
