It is that the place smelled the same on Tuesday morning as it did when the guest walked in on Sunday night - and the same again two years later when they came back. Which is why almost all of my advice to boutique owners is about restraint and locking. Set the level from the doorway, not from the desk you have been sitting at for an hour, because your nose has already adapted and theirs has not. Then lock it.
