Why the count is small
Most heritage square footage is not scentable
Courtyards, arcades, verandahs, open corridors and guest rooms account for the majority of a heritage property's area, and none of them takes a machine - the first four because they cannot hold a level, the last because reeds are the right tool there. What remains is a small number of enclosed public rooms, which is why a forty-room haveli and a twelve-room boutique property often need the same two or three units.

Jaipur is the one city where my first answer is often that the property needs less than the owner thinks. A haveli or a palace hotel arrives with a smell it has earned - old stone that holds cool, wood, lime plaster, the courtyard after it has been watered, whatever grows in it. Guests are paying for exactly that, and it is very easy to spend eleven thousand rupees covering it up.

So the sequence I use here is backwards from everywhere else. Walk the property at seven in the morning and write down what each area already smells of. Protect the ones that are lovely. Fix the ones that are not, at the source, because damp and drains and old textiles are not a fragrance problem. Only then look at the two or three fully enclosed rooms where a low background would genuinely help, which is usually reception and an indoor lounge, and almost never a corridor open to a courtyard.
