Activated carbon, and the HEPA misunderstanding
Carbon adsorbs some odour. HEPA does nothing for smell.
This is the most common confusion in the category and it is worth being precise about. A HEPA filter is a mechanical particle filter: it captures dust, pollen, smoke particulate and similar solids. The compounds that make cooking smell are largely volatile organic gases, and gases pass straight through a HEPA filter as if it were not there. So a purifier sold on its HEPA rating is not an odour device. Odour reduction in a purifier comes from the activated carbon stage, where porous carbon adsorbs some odour molecules onto its surface. That works, partially, with two caveats: carbon has a finite capacity and saturates, so a cartridge that has not been changed is inert; and the thin carbon sheets in most domestic units hold far less than a serious carbon bed. Useful as a second line in a closed-up flat. Not a substitute for extraction, and not a reason to skip cleaning the deposit.

A fragrance machine disperses scent into the air. That is the entire function. It does not react with, adsorb, capture or neutralise a cooking odour, and if a brand claims otherwise about a plain diffuser, treat the rest of their claims with suspicion. Used correctly - on air that is already clear, at a moderate intensity, on a schedule - it does something genuinely valuable: it gives a home a consistent smell of its own, day after day, which is most of what people are actually responding to when they say a house smells expensive or hotel-like. I would rather lose a sale than make one on a false claim, so here it is: nothing I sell removes a cooking smell. A diffuser disperses fragrance oil into the air. It has no filter, no reaction, no adsorbent surface and no mechanism of any kind for taking a molecule out of a room. If you have been told otherwise by anyone in this industry, including someone selling a product far more expensive than mine, they were overselling.
What frustrates me is that the real answer is not even a secret. Frying makes an aerosol of oil that settles on your curtains and your sofa, and the smell you are chasing at ten at night is coming off that fabric rather than out of the air. Extraction stops it landing. Washing takes it away. A carbon filter helps a little; a HEPA filter, despite the marketing, does nothing at all for smell.
