A tadka thrown into hot oil at nine in the morning is still in the curtains at eleven, and fragrance layered over it does not produce a fresher flat - it produces a third smell that is worse than either of the two you started with, and that a buyer reads instantly and correctly as something being covered. The physics
Frying is a surface event, which is why airing alone does not finish it
When oil gets hot enough to fry, a fine aerosol leaves the pan alongside the smell. You have three, and none of them is a stronger diffuser. What about the smell of the chimney or exhaust itself?
It is one of the most commonly missed sources in an Indian kitchen, and it is worth a direct look. The baffle or mesh filters in a chimney accumulate a layer of oil that oxidises and goes rancid, and after that the appliance is not extracting the smell so much as recirculating a worse version of it every time it runs. Lift the filters out and look; if they are tacky or brown, they need degreasing properly, and in an older kitchen the ducting and the fan housing may need attention too. The same applies to a window exhaust fan with an oily film on the blades. This is a maintenance job for the owner rather than a presentation task for you, but flagging it politely is genuinely useful to them beyond the sale, and it removes a smell that no amount of preparation on the morning will touch.
