Of course it can. A perfumer would be lying to tell you otherwise, and I have spent my working life on exactly the question of what happens when two smells meet. They do not take turns. They combine, and the visitor remembers the combination. That is why the cooking demonstration in an appliance showroom is unscented, without exception.
Quick answers — read this first
Can showroom fragrance interfere with food aromas during cooking demonstrations? Yes, and there is no honest way to soften that. Smell does not layer politely; two sources in one air produce a third smell that belongs to neither. Cedar over frying garlic, lemon-mint over bread from a steam oven - the visitor smells neither the fragrance nor the food as intended. Since the food aroma is the product demonstration, the fragrance is the thing that gives way, entirely, for as long as the demo runs.

So what does a showroom with demos actually do? It scents the sales floor and nothing else, and only when the kitchen is quiet. The machine sits on the reception side, far from the hood, on a timer; it is off before the chef starts and stays off until extraction has cleared the room and the air smells of nothing. Nothing is placed in or near the demo zone, and nothing edible - no vanilla, coffee or bakery notes - is in the register at any time.

Which SOSA product, and where? For a connected sales floor of about 1,500-3,000 sq ft, one SOSA Vaayu (Rs 11,999) on the reception wall: waterless, timer and app for the off-window, key-lock. A Mountain Breeze reed (Rs 849) or a SOSA Sukoon (Rs 1,899) at the desk of a small studio. Nothing at all in the demo zone. Fragrance is an interiors decision like lighting or music: SOSA makes no claim that it changes footfall, dwell time or sales, and no claim about what it does to any appliance.
The short answer
Short answer: yes. Two smells in one air make a third, and the third is what the visitor remembers. Because the food aroma is the demonstration, the fragrance gives way completely: nothing in the demo zone, machine off while the hob is lit, scent back only when the air smells of nothing.
The pick: nothing in the demo zone, ever. For the sales floor, one SOSA Vaayu (₹11,999) on the reception side from about 1,500 sq ft, in the Mountain Breeze register; a SOSA Sukoon (₹1,899) or a reed (₹849) at the desk of a small studio; one SOSA Angaan (₹25,999) past about 3,000 sq ft.
Next step: tell us how often the kitchen runs and where the hood is, and ask for a showroom scenting plan that keeps the two smells apart.
Fragrance versus food aroma, in five linesYes - two smells in one air always make a thirdThe food aroma is the demonstration; it wins, every timeNothing in the demo zone; machine off while the hob is litNothing edible in the register, even on quiet daysScent returns only when the room smells of nothing
This is not a matter of taste or level. It is how smell works, and the plan is built to respect it.

Straight answer
Can showroom fragrance interfere with food aromas during cooking demonstrations?
Yes. I want to answer that without a hedge, because a supplier who tells you a fragrance can be tuned to sit alongside searing butter is either not a perfumer or not being straight with you. Smell does not layer. It combines. When cedar and sage from a diffuser meet garlic in a hot pan, the visitor's nose does not receive two tidy signals; it receives one composite that belongs to neither, and it is that composite the memory stores. Sometimes the composite is merely odd. Often it is unpleasant - a green, resinous note under frying fat reads as something burning or something off. Either way, the thing the live kitchen exists to show - what a real meal smells like on this hob, in this oven - has been replaced by something the showroom did not intend. And it goes the other way too: once the fragrance has mixed with the cooking, it stops being your fragrance. So the answer to the question is not "a little, at high levels". It is yes, at any level, whenever the two share an air. From that fact the whole plan follows, and it is a plan of separation rather than of balance. In space: the demo zone is unscented - nothing placed inside it, nothing placed near it, the machine on the reception side of the floor and on the far wall from the hood, so the AC carries the scent away from the kitchen rather than into it. Where the machine goes with a live kitchen gives the geometry. In time: the whole floor's machine is off before the chef starts, because a floor is one volume of air and the corridor's scent will reach the kitchen door whether you want it to or not. Switching off during an oven or hob demo makes that a timer setting rather than a task. Afterwards: extraction, a wipe-down and the bins out clear the cooking smell; fragrance never does, because adding a third smell to a second is how you get a fourth. The scent returns only when the air smells of nothing. In the register: nothing edible at any time - not vanilla, coffee, caramel, bakery or warm spice - because even on a quiet day those read as food and the visitor should be smelling your appliances, not your diffuser. Mountain Breeze (pine, sage, cedar) is the default for exactly this reason; Morning Freshness (lemon, mint, eucalyptus) suits a white, glass floor. The machine is chosen by connected sales floor with the kitchen subtracted: a reed at ₹849 or a SOSA Sukoon at ₹1,899 for a small studio, one SOSA Vaayu at ₹11,999 from about 1,500 sq ft - waterless, 1h/4h/8h/24h timer and Bluetooth app for the off-window, key-lock - and one SOSA Angaan at ₹25,999 past about 3,000. Then the lines I put on every page of this cluster: fragrance is an interiors decision, like lighting or music. SOSA makes no claim that it changes footfall, dwell time, conversion or sales, no claim about what it does to any appliance or finish, and it is never a substitute for ventilation, cleaning or extraction. Demo and tasting zones stay unscented. Whether a showroom with a live kitchen should use commercial fragrance at all is the page before this one; demo days versus regular days is the schedule that makes the separation routine.
Yes - two smells in one air make a third, and the visitor remembers the third. The demo owns the air: nothing in the demo zone, the floor's machine off while the hob is lit, extraction clears the room, scent returns when the air smells of nothing. Vaayu (Rs 11,999) for the sales floor; nothing edible in the register.
For the sales floor of a 1,500-3,000 sq ft showroom that runs demonstrations, one SOSA Vaayu - waterless, 1000m³, timer, app and key-lock - at ₹11,999 on the reception wall. Nothing in the demo zone.

What carries scent on a floor with demos

The product is chosen by connected sales floor with the demo zone subtracted. Whatever you choose, it is placed on the reception side and it is off while the kitchen works.

SOSA Vaayu
Waterless cold-air nebuliser rated to 1000m³ - about 2,000-3,000 sq ft - on one unit, Rs 11,999. The reason it suits a floor with demonstrations is the off-window: 1h/4h/8h/24h timers and a Bluetooth app mean the machine is off before the chef starts without anyone walking to it, and the key-lock keeps the level where it was set on quiet days. Wall or HVAC mount for the far wall from the hood. No water, no residue.

SOSA Mountain Breeze Reed Diffuser
Under about 750 sq ft - the reed that reaches one desk and stops
SOSA Mountain Breeze Reed Diffuser
Himalayan pine, sage and Indian cedar - chosen for this family precisely because nothing in it reads as food, so on a quiet day it never competes with what the kitchen will cook later. Alcohol-free, six fibre reeds, flip weekly. 50ml Rs 849 lasts 6-8 weeks; 130ml Rs 1,349 lasts 14-18 weeks. It reaches one desk zone, which in a small studio with a demo counter is the whole point.
From ₹849
SOSA Vaayu
The machine whose best feature on this page is its off-switch
SOSA Vaayu Waterless Diffuser
1000m³ coverage (about 2,000-3,000 sq ft) on a single unit, Rs 11,999, adjustable intensity, 400ml tank running 90+ days a fill, Bluetooth app and 1h/4h/8h/24h timers, auto-stop, key-lock, under 38dB. Wall or HVAC mount so it sits on the reception side, away from the kitchen. CE, RoHS, SGS certified. Made in India.

Five things a perfumer knows about smells that meet

This page is less about the machine than about how the nose works. Five facts, each of which turns into one rule for a showroom that cooks in front of visitors.

1
Combination
Two smells make a third, and the third is what is remembered
On a blotter in a lab you can smell cedar, then garlic, then cedar again, and keep them apart, because they arrive in sequence. In a room they arrive together, and the nose reports one thing. That one thing is a new accord nobody designed: the green-resinous side of a pine and sage composition under hot fat, or a citrus over roasting onions. Some of these accidents are neutral; many read as burnt, sour or off, because the brain files an unfamiliar food-adjacent smell as a warning before it files it as pleasant. The visitor who came to smell what a steam oven does to bread leaves with the composite. There is no level at which this stops being true - a faint cedar under bread is still cedar-bread. That is why the family's rule is separation rather than a gentler setting.
Test: if you can name the showroom fragrance from the chef's side of the counter while a pan is on, the two smells are already combining.
2
Priority
The food aroma is the demonstration - it is not the intruder
It is tempting for an owner who has invested in a scent identity to think of the cooking smell as the disruption. Turn it round. The live kitchen exists so a visitor can smell what the hob and oven do, and that smell is the most persuasive minute of their visit. The fragrance is a piece of interior finish, like the lighting, and interior finish gives way to the demonstration every time. So the question is never "how do I keep my fragrance present during a demo?" - it is "how do I make sure my fragrance is absent?" The Vaayu answers that with a timer, an app and one physical button, any of which puts the machine off before the first pan goes on. Whether live cooking and coffee-tasting zones should stay unscented extends the same priority to the coffee counter, where the tasting is even more sensitive.
SOSA Vaayu
The Vaayu is off before the chef starts - by schedule, by app or by one press - and holds its quiet-day level under a key-lock.

Air
A floor is one volume - the corridor's scent reaches the kitchen door
Owners sometimes propose keeping the machine on but "away from the kitchen". Distance helps on a quiet day, and scenting the reception without fragrancing the demo area is built on it. It does not help during a demo, because a sales floor is one connected volume of air and the AC moves it around. A machine on the reception wall, running while the hob is lit, delivers a trace of cedar to the kitchen door within minutes, and a trace is enough to combine. So the rule during a demonstration is the whole floor's machine off, not the nearest one. Placement still matters - reception side, far wall from the hood, high - because it decides how quickly the floor is clean of fragrance once the machine stops, and how little reaches the kitchen on ordinary days.
Rule: during a demo the machine is off for the floor, not just for the kitchen. One volume of air, one switch.
4
Afterwards
Adding a smell to a smell is how you get a worse one
After the demo the room smells of what was cooked, and the instinct to bring the fragrance straight back is the most common mistake on this page. It produces exactly the composite described above, but now with nobody cooking to justify it, and at a level the advisor breathes all afternoon. Cooking odour is removed by extraction, time, a wipe-down of the counter and the bins going out. Fragrance has no subtractive power; it only adds. The scent returns when the room smells of nothing, judged from the reception desk with your nose. If the room routinely still smells of food an hour after a demo, the hood, the make-up air or the cleaning order is the problem, and whether a scent machine can remove cooking odours says plainly that it cannot.
Rule: fragrance is never a mask. Over cooking smell it is a second problem, not a solution.
5
Register
Nothing edible, even on the quietest day
The last fact is about the days when nobody is cooking. A showroom register that contains anything edible - vanilla, coffee, caramel, bakery, cinnamon - is already competing with the kitchen even when the kitchen is cold, because the visitor's nose files those as food and then meets the real food later and has to reconcile the two. The answer is a register that has nothing to do with eating: cedar, sage, pine, tea, dry woods, a clean mineral note, or lemon-mint on a white floor. In the SOSA range that is Mountain Breeze first and Morning Freshness for glass and white lacquer. Fresh Brew, a coffee-vanilla scent, is ruled out here by name: your coffee machine owns coffee. Whether different display zones should have different fragrances is the sibling answer for the rest of the floor - one register, never two.
SOSA Mountain Breeze Reed Diffuser
Mountain Breeze - pine, sage, cedar. Chosen for this family because nothing in it could be mistaken for something cooking.

The SOSA principle
Fragrance interferes with food aroma at every level, so a showroom that cooks does not manage the overlap - it removes it.
Nothing in the demo zone. The floor's machine off while the hob is lit. Extraction, then nothing, then the scent. Two smells kept apart make no third.

Nothing. The hood pulls air toward itself and strips what reaches it, and nothing is placed here. The visitor smells clean steel and stone.
Anywhere on the floor, demo afternoon
The demonstration only. The floor's machine went off before the chef started; extraction is running; butter, bread and coffee are the only smells in the building.
Reception, an hour after the demo
Nothing yet, if the plan is working - extraction, wipe-down and bins have cleared the food, and the scent has not returned until the air is neutral.
SOSA AngaanA second floor without a kitchen

Three sibling pages carry the detail behind that table: whether a showroom with a live kitchen should use commercial fragrance sets the rule, switching off during an oven or hob demonstration handles the timer, and whether a scent machine can remove cooking odours handles the hour after. SOSA makes no claim that any of this affects footfall, dwell time, conversion or sales; the demo zone stays unscented and the fragrance is an interiors decision.

SOSA Mountain Breeze Reed Diffuser
For a studio with one demo counter: one Mountain Breeze reed at the reception desk, ₹849 for 50ml, 6-8 weeks - reaches one desk zone and never the counter.

A note from Sonal

I trained to build accords - to put three or four materials together and know what the fourth thing they make will smell like. That is exactly why I will not tell a showroom that its fragrance can coexist with a cooking demonstration. It cannot. Cedar and hot butter make something, and the something is not on your brand board. The honest position for a fragrance house is to say so, and then to build a plan in which the two never share an air: the demo zone unscented, the floor's machine off while the hob is lit, and the scent back only when the room smells of nothing.

The machine's part in that is mostly its off-switch. The Vaayu has a timer, an app and a button, and any of them puts it off before the chef starts; the key-lock keeps the quiet-day level where the team agreed it. It sits on the reception side, far from the hood, so that on ordinary days the AC carries the scent away from the kitchen rather than into it. Afterwards the hood does the clearing. I am asked at least once a week whether the machine can be turned up to cover the smell of the demo, and the answer is that it would give you a third smell you like less than either.

The register does the rest of the work on the quiet days: Mountain Breeze because nothing in pine, sage and cedar could be mistaken for food, Morning Freshness on a white floor. Nothing edible, ever, in a building with a hob in it. And the lines I put at the end of every page: no claim that fragrance moves footfall, dwell time or sales, no claim about what it does to any appliance, never a substitute for extraction, an interiors decision like lighting or music. The demo and tasting zones stay unscented. Made in India, and a portion of every order supports girl-child education through Nanhi Kali.

Frequently asked questions

Does ambient fragrance actually change how a cooking demonstration smells?
Yes. Smell does not layer; two sources in one air combine into a third smell that belongs to neither. Cedar and sage over garlic in a hot pan, or lemon-mint over bread from a steam oven, produce a composite the visitor remembers instead of the food. Because the food aroma is the product demonstration, the fragrance is removed entirely while the demo runs - nothing in the demo zone, and the whole floor's machine off.
Is there a fragrance level low enough to run during a cooking demo?
No. A faint trace of cedar under bread is still cedar-bread, and the composite forms at any level. The plan for a showroom that cooks in front of visitors is separation, not balance: the machine on the reception side and far from the hood on quiet days, off before the chef starts, and back on only when extraction has cleared the room and the air smells of nothing. A gentler setting inside the kitchen is not a solution.
If the machine is far from the kitchen, can it stay on during the demonstration?
No. A sales floor is one connected volume of air and the AC moves it around, so a machine on the reception wall delivers a trace to the kitchen door within minutes, and a trace is enough to combine with the cooking. Distance decides how little reaches the kitchen on ordinary days and how quickly the floor clears once the machine stops. During a demo the rule is the whole floor's machine off, not just the nearest one.
Why does the fragrance register matter on days when nobody is cooking?
Because anything edible in the air - vanilla, coffee, caramel, bakery, warm spice - is filed by the visitor as food, and they then meet the real food later and have to reconcile the two. A kitchen-appliance showroom uses a register that has nothing to do with eating: pine, sage, cedar, tea, dry woods, or lemon-mint on a white floor. In the SOSA range that is Mountain Breeze as the default and Morning Freshness for glass and white lacquer.
Does keeping fragrance and food aromas apart make any difference to sales?
SOSA makes no such claim. The reason to keep them apart is that the demonstration is the point of the live kitchen and it should smell of itself, which is a hospitality and interiors decision like lighting or music. SOSA does not assert that ambient fragrance changes footfall, dwell time, conversion or sales, makes no claim about what it does to any appliance or finish, and treats it as never a substitute for extraction, ventilation or cleaning.
