Commercial scenting goes wrong in a predictable order: somebody buys a machine to cover a smell that has a source, puts it where the socket is, runs it at full intensity because day one felt weak, and ends up with a room people comment on for the wrong reason. Coffee produces far more volatile material than any ambient system, so on a connected floor the cafe is the register whether you chose it or not. Closed wardrobes, drawers and cabinets are sealed micro-environments that room fragrance does not reach.
