Where does dining fragrance go? On the sideboard, buffet or console at the edge of the room, or in the wider room air — never on the table, never over the plates. The table belongs to the food.

The five-step dining method

How to fragrance a dining room properly
Do these five things, in this order, and the room will smell looked-after without ever getting between anyone and their plate.

1. Clear cooking odour at the source. Run the chimney or exhaust while you cook, open a window afterwards, and let the air genuinely turn over. Fragrance crowns clean air — it never masks a lingering onion-and-garam-masala note. If the room still smells of lunch, fix that first.

2. Keep every source off the table. Nothing — no diffuser, no reed, no candle — sits on the dining table or over the plates. The table is for food. Scent lives at the edge of the room.

3. Choose a clean, non-sweet family. Citrus-mint or a soft floral frames a meal. Coffee, vanilla and heavy amber compete with dessert and rich food, so keep those away from where people eat.

A closed dining room is a simple problem: air it, then scent the room. An open kitchen-dining is two rooms sharing one volume of air, and the cooking side keeps feeding odour into the eating side all evening. In that case you are not masking — you are out-running. Indian food is aromatic by design — tempered cumin, roasting spices, ghee, coffee after the meal. A sweet gourmand scent in that room does not blend; it argues. This is why I steer dining scenting towards clean, light, cutting families. The lesson that shaped how I scent dining rooms came from a dinner I got wrong.
