It should not change, and the reason is physical rather than aesthetic. A display kitchen is not a room. It is a set of units standing on an open floor, usually with no ceiling of its own, no door and no separate air path, and the aisle beside it is the same aisle that runs past every other display you have. So a fragrance introduced anywhere on that floor is, within a few minutes, everywhere on that floor. If you gave your modern display something bright and your classic display something woody, a customer walking between them would not experience a change - they would experience a mixture, strongest exactly where the two meet, which is the aisle where your designer is standing explaining the difference between them. Differentiate displays with the tools that actually hold a boundary - materials, lighting temperature, styling, plinth heights, how a display is dressed. Those are visible and they stop at the edge of the display. Smell does not. Now the part that does vary, which is the real content of this post. Accept that a display is not a room

The reason per-style scenting fails is not taste, it is that there is nothing to hold a smell in place. A display kitchen is open on at least one side, usually open at the top, and shares an aisle and an air path with everything around it. Anything you release beside it is in the next display within minutes, and strongest in the gap between the two. So what a customer walks through is a mixture, and the mixture is worst exactly where your designer is standing explaining the difference between the styles. A zone of air needs a real boundary - a wall, a door or its own air handling - and most showrooms have exactly one such volume, however many displays are standing in it.

This is the part that actually changes between display styles, and it is worth doing deliberately. Owners set the level standing in the display they are proudest of, which is usually near the door and usually the one that photographs best - four minutes, on their feet, with a nose that adapted twenty minutes ago. Let dryness do the reconciling
The one quality every palette on your floor can live with
The fair objection to a single profile is that your dark-wood display and your white minimal display want different things. They do, and dryness is what they have in common. A dry woody register leans towards timber and dark palettes; a dry green or mineral leans towards stone and minimal ones; and a dry profile in the middle belongs to all of them without arguing with any. What fails on a mixed floor is anything with a strong character of its own - sweet, floral, powdery, or anything edible, which is ruled out in a kitchen showroom entirely. This question usually arrives from a showroom that has done everything else properly. They have a modern wing, a classic wing and a luxury wing, each styled and lit with real care, and the fragrance feels like the last piece of a well-made puzzle. So they ask me how to vary it across the three, and expect a table. What they get instead is a short physics lesson and a rather deflating answer: you cannot, because those three wings are one room, and one room holds one smell.

I try to make it concrete. Stand in the aisle between your classic display and your modern one. There is no wall there, no door, no ceiling of its own, and the air in both is the same air being pushed around by the same system. Put a woody fragrance one side and a bright one the other, and the place they meet is precisely where your designer stands explaining the difference - so the customer's experience of your careful distinction is a mixture. It also costs three times as much and needs three settings maintained by three people who each think theirs is right. The tools that genuinely differentiate a display are visible ones: material, light temperature, styling, how it is dressed. Those stop at the edge of the display. Smell does not.

What does change is worth doing properly, though, and it is the part most showrooms get wrong: which display you judge the level from.
