You unlock at half past ten and the store smells of leather and board, exactly as it should. By four on a Saturday it smells used. Nothing has gone wrong overnight. What changed is how many people are standing in a room whose air moves at one fixed speed.

Why does my shoe store smell fine in the morning but stale after peak hours? Because the room empties at a fixed rate and fills at a variable one. Overnight nothing is added and even modest ventilation has hours to work, so at opening you meet the lowest point of the whole day. How many people can a shop floor carry before it goes stale? There is no single number, because it depends on the volume of air in the room and how many times an hour that air is replaced, not on the floor plan. A double-height store holds far more air than its square footage suggests and will carry a crowd for longer. A low-ceilinged unit on recirculated cooling, with the same floor area, will turn much sooner because the same number of people are sharing much less air and the cooling is mostly moving what is already there. Measure the room in air, not in square feet.

Why does a shoe store read clean at opening and stale at peak, and what fixes it?
Because two different numbers are at work and only one of them changes during the day. The first is the rate at which your store exchanges the air inside it for air from outside. That number is set by the building - the size and setting of the air handling, whether outside air is genuinely drawn in or the cooling simply recycles what is already in the room, whether there is any extract, how often the front door opens. It is roughly constant from opening to closing. The second number is the load, and it moves all day: people standing in the room, the warmth they and your lighting produce, the moisture a busy room carries, footwear coming off in the trying area, boxes opened and closed, stock handled. Overnight the load is zero for twelve or fourteen hours, so even a mediocre ventilation rate has time to bring the room right down - which is why the morning reading flatters almost every store and why it is the least useful moment to judge one. By four on a Saturday the load is at its highest and the rate has not moved at all, so the difference accumulates and you meet it as stale. That word is worth interrogating, because owners hear it as an accusation about cleaning. It is not. Dirt smells the same at eleven as it does at four; it does not know what time it is. A smell that rises with the crowd and falls when the crowd leaves is tracking occupancy. The test is simple and free. Lock up at closing, leave the room empty, come back an hour later and walk in without cleaning anything. First, volume rather than floor area
A store is measured in air, not in square feet
Two stores of 900 sq ft can behave completely differently, and the reason is usually overhead. A double-height unit with a four-metre ceiling holds far more air than a low mall box of the same footprint, and that extra air is a buffer: the same crowd is diluted into more of it, so the room takes longer to turn. Mezzanines complicate this in the other direction, because a mezzanine is a separate volume with its own stillness rather than extra capacity for the floor below. When you are working out why your store turns at four, measure the ceiling as well as the plan, and note where the volume is genuinely connected and where a doorway, a level change or a screen has quietly divided it. Any coverage figure you are ever quoted, ours included, is a volume figure translated into square feet at an assumed ceiling height.

Second, where the air actually comes from
Cooling is not ventilation, and most sealed units confuse the two
A great many stores in Indian malls and new high-street buildings are cooled by a system that mostly recirculates: it takes air from the room, chills it and gives it back. That keeps the room comfortable and does almost nothing about load, because the same air is going round. Ask two specific questions of whoever runs the plant. What proportion of the supply is outside air, and can that proportion be raised during peak trading hours and weekends? Is there any dedicated extract - in the stockroom, in a back corridor, in a toilet - and is it running during trading or only after? Very often the honest finding is that the store has excellent cooling and almost no ventilation, and that single fact explains the entire peak-hours story. Where you cannot change the plant, mechanical extract in the back of the store and a genuine purge either side of peak are the practical substitutes.
Tip: if the only fresh air your store gets arrives through the front door, your ventilation rate is set by your customers.

Third, when you run what you have
Extract after closing is the one hour it is least needed
Most stores run their fans and their cleaning at the end of the day, which is the hour the room can look after itself. Move the effort to where the curve is steepest. Purge before peak - fifteen or twenty minutes of everything you have running hard while the floor is still quiet, so you start the busy period from a lower point. Run the extract through the peak rather than after it. Purge again immediately afterwards, when the room is full and empty at the same time. None of this costs equipment; it costs a schedule and somebody remembering. It is also the change that produces the fastest visible difference, because you are attacking the exact hours where the two numbers diverge. A store that starts its busy period low finishes it in a different place from one that starts it already halfway up.

I get sent photographs of beautiful stores with this question attached, always written at the end of a long Saturday. The owner has cleaned, re-cleaned and started to suspect the staff. Almost always the store is spotless and the answer is duller than anyone wants: the room holds a certain amount of air, that air is replaced a certain number of times an hour, and at four in the afternoon there are more people in it than the number was ever set for.

So the first thing I ask for is not the floor plan but the ceiling height, and then whether the cooling brings in outside air or simply recycles it. Those two answers explain most peak-hours stories I see. After that it is a schedule question - purge before the rush, run what you have during it - and only then, much later, does anyone need to think about what the room should smell of, which is a reed at ₹749 or ₹849 for most single stores.
