A chef I spoke to years ago said something I have repeated ever since: a guest cannot see my kitchen, so they judge it by the only back-of-house room I let them walk into. I will not, and the reason is the most useful thing in this post. The washroom is not letting you down because it lacks a fragrance. It is letting you down because a guest is using it as evidence, and evidence cannot be argued with by adding perfume to it.

The mechanism is simple and I think about it a lot. A guest has no access to your kitchen. They cannot see the cold room, the prep benches, the drainage or the bins, and no amount of menu design will let them. Then you show them one room that adjoins all of that in their imagination, leave them alone in it for ninety seconds, and they read it. A clean room removes the question. A room that smells answers it, badly, about a kitchen that may in fact be immaculate. That is unfair and it is also exactly what I would do in their place. So the honest work here is drains, traps, bins, extraction and a cleaning interval, and I would rather write that paragraph than sell a bottle into a room that is not ready for one.
