This question usually arrives after a brand partner has asked for something of their own, and it feels like a diplomatic problem. It is actually a physics problem, and physics gives you a much easier answer to deliver.

Two fragrances in one room do not stay in two places - the sections share a volume of air, so the boundary you drew on the floor plan does not exist in the air, and the two profiles meet somewhere in the aisle between them. What a customer walking that aisle experiences is not two identities; it is one muddled one. And there is a second reason that has nothing to do with air: in your store, you are the host. Straight answer
Should a multi-brand watch store have one retailer's signature or a fragrance per brand section?
One retailer's signature, and I would argue it without hedging. Take the physical argument first, because it settles the question before any branding discussion begins. Your brand sections share a volume of air. The lines you drew on the floor plan are joinery, lighting and signage; they are not partitions in the air, and fragrance does not respect them. Put a different profile in two adjacent bays and the two do not stay put - they drift, they meet somewhere in the aisle between them, and a customer walking that aisle does not experience two identities in sequence. They experience one confused one, which is worse than either fragrance on its own would have been. This is the same reason a second machine in a large showroom is a mistake unless it is serving genuinely separate air: a second machine belongs to a second volume, never to a second corner of the same room. The only boundary that actually holds is a wall with a door and its own air handling - an enclosed brand room or a closed private lounge on its own AC zone. Decide who the host is
The one element the retailer owns outright is the air
In a multi-brand store almost everything visible is negotiated - the case design, the display materials, the signage, sometimes the lighting inside a bay. The air is not. It is yours, it is the same in every section, and it is one of the very few things that says this is a business with a point of view rather than a hall of concessions. I would not give that away, and I would say so warmly rather than defensively when a brand partner asks. You are not refusing them an identity; you are declining to fragment the room they are standing in. It is a friendlier conversation than most retailers expect, because you are describing a constraint of the building rather than making a claim about whose name matters more.

Think about month three, not day one
Several machines on one floor become several levels within a fortnight
Even if the air behaved, the operations would not. Two or three machines on one trading floor mean two or three dials, and each one will be adjusted by whoever was standing nearest when a customer said something. Within a fortnight the floor has a loud end and a quiet end and nobody can reconstruct how it happened. Almost every version of this question I receive has a diplomatic problem hiding inside it. A brand partner has asked for something of their own, the retailer does not want to say no, and the hope is that I will sell a machine per section so nobody has to have the conversation. I understand the impulse, and I still say no, because the thing being asked for cannot be delivered by any equipment I or anyone else sells. I would rather have one awkward five-minute conversation with a brand partner than sell three machines that produce a single blurred result on a floor everybody has spent heavily on.

It is genuinely easier to explain once you frame it as a building question. Fragrance is contained by walls, doors and air handling, and by nothing else. Two open bays off the same floor are one body of air, so two profiles in them produce a third thing in the aisle that neither party chose. Saying that is not a refusal, it is a description of the room, and in my experience brand partners accept it immediately once it is put that way. Where there is a genuinely enclosed brand room on its own AC zone, the conversation is different and worth having. It also spares you a negotiation that would otherwise reopen every time a new section is fitted out.
