This is the highest-value slot in the whole evening. Wipe the hob surround, backsplash, counters, cabinet fronts and dining table while the surfaces are warm, because fresh warm film comes away with warm water and a drop of dish soap and the same film cold and oxidised needs a degreaser. Take throws and cushions to a window or balcony and shake them out. Vacuum the rug if there is time. Put the kitchen bin out of the flat rather than leaving a full liner in an open plan. Wash your hands and change your shirt, because cooking oil is in your clothes and your hair too, and you will otherwise carry the smell around your own party. Then close the far window ten minutes before the fragrance goes on, so the room settles to an even temperature and the scent is not immediately pulled out of the window you left open.

I cook for people often, and the thing I have learned is that the smell of a house at eight o'clock was decided at half past five. Everything after that is damage control. So the single change I would recommend to anyone who entertains is to switch the extraction on before the first pan and cook the most difficult dish first rather than last.
