A full warm house behaves nothing like an empty one

There is a particular disappointment familiar to anybody who has prepared a large house for an evening: at six o'clock the place is immaculate and smells wonderful, and by nine, with everybody in it, there is nothing there at all. It reads as a product failure and it is not one. It is a change of conditions so large that the six o'clock setting was never going to survive it, and understanding the three mechanisms makes the whole thing solvable. The first is absorption. People and textiles take up fragrance. Forty guests in coats, silk, wool and cotton represent an enormous quantity of absorbent surface introduced into a room, and they remove a meaningful proportion of what is in the air. This is the same reason a heavily furnished room with rugs and curtains always needs more than a hard-surfaced one. A house set for an empty condition is therefore set too low for a full one by a wide margin, and the answer is capacity rather than concentration - the ability to keep releasing into a room that is continuously taking it away. The second is competition, and it is not really a problem so much as a priority to accept. Hot food produces a very large amount of aroma and it dominates its vicinity completely, which is exactly as it should be. Taste is mostly smell, and a dining table where the food has to compete with a room fragrance is worse for everybody. The correct decision is to scent the parts of the house where nobody is eating and let the table look after itself. The kitchen, needless to say, gets nothing at any time. The third is volume. A house being used for a party has every internal door open, usually the front door propped, and often a terrace or garden door standing open all evening. The effective air volume can easily triple, and it is also being exchanged constantly as people come and go. This makes the empty-house calculation obsolete twice over. It is also why timed cycling suits an evening better than a constant trickle: a pulse into a moving volume is more perceptible than a steady low output that gets carried away. Placement follows from all of this. The entrance is the most valuable position in the house, because arrival is the only moment every guest experiences identically and with an unadapted nose - the hosts have been in the house all day and cannot judge it, which is why a fresh arrival is the only reliable check. Passages and seating areas away from food are the second priority. Guest bathrooms deserve their own small source, because they are the one place every guest is alone and paying attention, and a reed diffuser there needs no maintenance during an evening. Two places get nothing. The dining area, for the reason above. And covered outdoor spaces - terraces, verandahs, balconies - which cannot hold fragrance at all, because they exchange air with the outdoors continuously. This is worth stating plainly because it is a common and expensive mistake: no machine and no dose will scent a covered terrace, and the money is better spent on the entrance every guest walks through. Finally, if there are diyas or candles, they belong well clear of curtains, dupattas, paper decorations and anything flammable, never near a hob or cooking oil, never unattended, and never left burning as the evening winds down.
