A candle at the table sits in the air people are breathing while they eat, at the exact height and distance where it mixes with what they are tasting, and since most of flavour is smell, an expensive candle interferes just as effectively as a cheap one. What you actually wanted from a candle at dinner is the light, the low warmth and the small ceremony of lighting it, and unscented candles give you all three with none of the competition. If you love a particular scented candle, put it in the entrance or the living area where guests arrive, ideally in the same family as whatever is running in the rest of the house, and light it before people come rather than during the meal. Then let the table have flowers, light and food, which is what the table was always for.
What about the smell of the cooking itself - should I try to cover it?
Cover, no. Manage, yes - and the distinction matters. The smell of a good meal being finished is genuinely part of the welcome at a dinner party and there is no reason to fight it, but the smell of an hour of heavy tempering that has settled into the curtains is a different thing entirely. So run the extractor during and well after cooking, since the airborne oil keeps moving around the house long after the pan is off and switching the extractor off with the gas is the classic error. Close the kitchen door for anything deep-fried. Cross-ventilate the ground floor in the afternoon before you cool and close the house. What you should not do is add fragrance on top of a heavy cooking smell, because the hybrid is far more noticeable than the cooking was, and a fresh nose reads it as concealment. Which register is best if my dining table is in the living room?
The clean, dry ones, dosed lower than you would otherwise. What to keep for another kind of evening are the warmer and bolder registers: the St. Regis-inspired amber, violet and woods is beautiful for a drinks party in a dark-wood room, and the W Hotels-inspired citrus, pepper and amber is the boldest of the seven, and because a warmer register reads as more present in a room than an airy white tea one, neither belongs at a level anywhere near a meal. Is it worth scenting at all if the food is going to dominate anyway?
Yes, because the value is not at the table and never was.
