A showroom has half an hour. A hotel is the exception, and the exception changes the whole answer: a hotel is the only commercial building a guest sleeps in. You have seventy-two hours rather than thirty seconds, and a good many of those hours are spent by somebody lying in your air with their eyes closed. So the governing question is not what smells impressive when a guest walks in. It is what is still welcome on the third morning. That requirement eliminates most of what a lobby consultant would reach for. Sweet, rich, amber-led and gourmand directions read generously in the first minutes and become wearing across hours - that is a property of the family rather than a fault in any particular product, and it is why they work beautifully in a boutique a customer leaves after fifteen minutes and badly in a building a guest returns to five times a day. A hotel is a sequence of spaces with completely different tolerances, and the gradient between them is the design. The lobby carries the working level. It is the only space where a guest is alert, upright, arriving from outside and forming an impression, and it is also the hardest space to hold: a street or porte-cochere door opening constantly, the strongest air handling in the building, high ceilings in many properties, and continuous traffic. Circulation - lift lobbies, corridors, stairs - runs very low or nothing at all. These are conduits rather than destinations, and in a hotel they are also the spaces most likely to be over-served, because management walks them daily and keeps concluding something is missing while a guest walks them once and receives everything at full weight. Guest rooms run the lowest level in the building, or nothing. This is the point where hotel practice differs most sharply from every other category, and it is worth stating firmly: a guest room is somebody's bedroom for three days. They will unpack in it, work in it, eat in it and sleep in it, and they cannot leave when they have had enough. Anything a guest cannot escape should be set well below the level you would choose for a space they pass through. Back-of-house, laundry, linen stores and kitchens get nothing. One register throughout, varied only by level. A guest crosses five or six thresholds between the porte-cochere and their bed, and a change of level at each reads as the building quietening as they go deeper into it - a coherent and rather elegant story. A change of register at a threshold reads as a discontinuity, or more plainly as a fault, and it is the fastest way to make a property feel like several buildings joined together. There is a third element that a hotel needs more than any other business, and it is not the register or the level: it is consistency. A hotel is one of the few businesses where the same person experiences the building repeatedly and deliberately, so it is one of the few where the air can actually become recognisable. But recognition is built by repetition, and repetition requires the building to be the same at ten in the morning and at midnight, on the fourth floor and the ninth, in June and in December. That is an operational problem rather than a fragrance one, and it is where most hotels lose the value of whatever they chose. The mechanism that undoes it is worth knowing precisely: everybody who works in a hotel adapts to a steady background within about an hour of arriving and stops perceiving it, and adaptation is asymmetric, so a level never seems to have grown, only to have gone.
