Of breakfast, and of nothing you added
This is one of the few questions in hotel fragrance where the correct answer is to spend nothing, and it is worth explaining why rather than simply asserting it. Breakfast is the one hour in the day when a hotel's food smell is unambiguously an asset. Coffee being brewed, bread toasting, hot butter, eggs cooking to order, something on a griddle - these are specific, warm, universally legible and strongly associated with exactly the thing you are selling at that moment, which is a good morning in a good building. No ambient fragrance in existence competes with that, and none should try. There is also a harder constraint underneath the aesthetic one, which is that fragrance near food is not a smell question at all, it is a taste question. Smell and taste are the same sense in practice, and a guest sitting down to eat perceives an ambient note as interference with what is on the plate rather than as atmosphere around it. That is why a scented dining room reads as slightly wrong even to somebody who cannot say what is wrong. Nobody complains about it, and everybody eats a little faster. So the specification for a breakfast room during service is nothing, or the lowest setting your scheme allows, and if your ambient system runs on a timer this is the obvious place to programme a gap. If your restaurant sits open to the lobby and receives the lobby's register whether you like it or not, that is a design constraint rather than a choice, and it is an argument for the lobby itself being set lower than most properties set it. Now the two questions that actually matter, because the breakfast room itself is easy and its neighbours are not. Question one is where breakfast travels while service is running. A breakfast operation is a large, hot, open source running for two or three hours in a building that is usually at its busiest, and it does not stay in the restaurant. The paths are predictable: the restaurant doors, which are propped open at exactly the hour when they should not be; the lobby, if the restaurant is open to it, which is the common boutique-hotel arrangement and the reason so many small properties smell of eggs at nine in the morning; the ground-floor lift lobby, which then loads every car; the service corridor and the kitchen's own door to it; and the lift shaft itself, which is one of the strongest vertical paths in any building and will deliver breakfast to the eighth floor with no help from anybody. None of that is fixed with fragrance. It is fixed with doors that close, a kitchen that is under negative pressure relative to the restaurant, a restaurant that is under negative pressure relative to the lobby, extraction that is actually running at capacity during service rather than at a comfort setting, and enough make-up air that the extraction can do its job. If your building leaks breakfast into the lobby, the honest answer is that you have a ventilation balance issue at a particular hour, and a diffuser in the lobby will make it worse rather than better, because fragrance combines with what is already there and the combination is worse than either alone - a lobby that smells of coffee and cedar together is a worse room than one that smells of coffee. Question two is the reset. Breakfast ends, and the room has two or three hours before it is a lunch room, a meeting room, an afternoon tea room or simply a space guests walk past. What happens in that interval is entirely a ventilation decision, and most properties do not make it deliberately. Run the extraction hard for a period after service rather than dropping it back the moment the last guest leaves. Open what can be opened. Clear the buffet, the chafing dishes and the waste promptly, because a cleared line stops producing and an uncleared one carries on for an hour. Get the used linen out of the room rather than stacked at the service station. And if the room has soft furnishings - upholstered banquettes, curtains, carpet - understand that they are absorbing every morning and releasing every afternoon, which is why a breakfast room that reads fine at eleven can read of yesterday at four. That is a soft-materials cycle question, and it belongs on the cleaning schedule as its own line rather than being addressed with a machine. Only after the reset is honestly handled is there a fragrance decision at all, and it is a modest one: if the room is used in the afternoon or evening for something else, a low level of the house register can be run outside food service to mark that the space has changed function. Keep it the same register as the rest of the property and vary only the level, because a change of level reads as the building quietening while a change of register reads as a fault.
