Every rung below this one is an argument about whether you need the expensive machine. This is the first rung where I do not have that argument, and the whole post becomes something more useful instead: how to specify one properly so you never have to think about it again.

The single most common mistake at this size is a machine positioned for tidiness. Find where conditioned air enters the centre and put the source near it, so the building's own air movement does the distribution work. Then find the return grille and stay away from it, because a machine sitting in the return path has its output drawn out of the room before anyone smells it - a tissue held up to the grille will show you the direction in seconds. If you have central air handling, wall mounting or specifying into the supply side is the cleanest answer, though ductwork and filtration are your engineer's call and installation support is not published, so confirm the scope with SOSA first.

A schedule is worth more than a setting at this size
A 1,500 sq ft centre usually has more people going through it than a small showroom, and the thing that keeps it consistent is not the dial but the calendar. Set the 1h/4h/8h/24h timers so the machine runs through trading hours and stops overnight - a room that has been scented for sixteen hours arrives at Monday morning heavier than you set it. If you run live cooking, the machine comes off before the demonstration starts and stays off until the extraction has cleared the air, because switching back on into cooking air gives you a mixture rather than a room. Judge it at minute ninety, then lock it and stop touching it
Your customer spends sixty to ninety minutes seated at a table choosing finishes, and exposure compounds the whole time; your designers breathe the same air nine hours a day. So the measurement lives with them, not with you - your nose adapts within about twenty minutes of walking in, which is why every over-scented showroom was set by somebody standing in the doorway. Ask the design team after a normal week and treat a hesitant yes as a no.
