Fragrance frames the meal — it never competes with the food. So the "best" dining-room scent is rarely the richest one. It is the one that reads as clean air, sits low and off the table, and steps back the moment the food arrives.

But put a coffee-vanilla accord over a plate of dal and rice and you get confusion, not cosiness. The nose is trying to taste two things at once. The best dining fragrance does the opposite of the food: where the meal is warm, savoury and complex, the scent is cool, clean and simple.
There is a second rule underneath the casting one, and it decides more than the note itself: keep it low and off the table. A beautifully chosen fragrance placed as a centrepiece is still a mistake, because it meets the food at nose height. Put the same fragrance on a sideboard across the room and it becomes atmosphere.
