The open-plan kitchen-diner is one room pretending to be two. Fragrance frames the meal — it never competes with the food. Scent before, recede during. The whole trick is treating one shared body of air, clearing the cooking at source, then letting a single low signature drift across both zones.
Quick answer
Clear the cooking odour first. Chimney on, window cracked, bin lidded — fragrance crowns clean air, it never masks live frying.
Treat it as one room, not two. One system placed on the living-side edge — never on the table — serves both zones better than two units fighting each other.

Why open-plan is a two-zone problem
A closed kitchen has a door you can shut. An open-plan home does not. The tadka you tempered at seven o'clock is still hanging over the dining table at eight, because there is no wall to stop it. So the honest first move has nothing to do with fragrance at all — it is airflow. Run the chimney or exhaust while you cook and for ten minutes after. Open a window on the opposite side so air moves through rather than pooling. Keep the bin lidded and empty it before guests.
