Recognition is a function of repetition. A shop meets a customer once a month for eleven minutes. A restaurant meets them for one evening. A hotel meets the same guest perhaps forty times across a three-night stay: arrival, lift lobby, corridor, room, corridor to breakfast, lobby, corridor again, room again, and so on. No other commercial building gets that density of exposure from one person, and a returning guest adds another forty. That is a genuine structural advantage and it is the reason the hotel industry has taken scent more seriously than most.
