At 1,500 sq ft, should a footwear store run one scent machine or several zones?

First, one connected volume carries one atmosphere
You cannot hold two different levels in air that moves freely between them
This is the physical fact the whole page rests on. If air can move freely between two parts of your store, they are one body of air, and a body of air homogenises - not perfectly and not instantly, but continuously. That means you cannot hold two deliberately different intensities in one connected room, however far apart you put the sources. What you can hold is one level with an uneven distribution, and the unevenness is set by where the air actually moves: near a supply grille, along the main circulation route, in the still pocket behind a tall fixture. So the correct response to a corner that reads differently is not another source. It is to ask why the air is not reaching it, and the answers are usually mundane - a fixture in the wrong place, a supply grille aimed at a wall, a return that pulls everything out of one end before it has crossed the room.
Tip: hold a light tissue at the reading you dislike. If it does not move, the problem is air, not intensity.

Second, what a second unit actually does here
Competing gradients, a band in the middle, and nothing left to tune
Put two sources in one connected volume and you do not get two zones - you get two overlapping fields in the same air. The practical result is a band of higher intensity between them where both contribute, thin reads at the outer ends where neither does much, and a room that changes character as somebody walks through it, which is precisely the effect a considered store is trying to avoid. Worse, you have lost your instrument. With one source you can change a setting and read the room's answer. With two, every adjustment moves the overlap and the edges together, so you end up chasing: down at one end, up at the other, back again a month later. Owners describe this as the fragrance being inconsistent. It is not inconsistent; it is two systems in one room, doing exactly what two systems in one room do.

Third, how to count volumes
Mark the shut doors, the level changes and the separate AC branches
Take the plan and mark four things: every door that is normally shut, every level change including a mezzanine, every area on a separate air-conditioning branch, and any part of the store you cannot see across because of a solid partition. That drawing, not the square footage, tells you how many decisions you have. In a typical 1,500 sq ft footwear store the honest count is two: the shop floor, and the stockroom. And the stockroom is not a scenting decision at all - it holds the highest density of boxes, adhesive and new rubber in the building, and what it needs is a self-closing door, extraction, and ideally to be kept slightly negative in pressure to the floor so air moves in rather than out. If your 1,500 includes a mezzanine office or a first-floor extension, that is a genuine second volume and it gets its own small decision, usually a reed.
Tip: if a door is propped open every day, it is not a boundary - mark it as connected and plan accordingly.

The zoning instinct is a good instinct applied to the wrong geometry. An owner looks at 1,500 square feet, sees a front half and a back half, and reasonably concludes that two halves want two machines. But the air does not know where the halves are. It moves across the whole floor all day, so what you get is not two zones - it is one room with a loud band somewhere in the middle and thin ends.

So I ask for the plan with the shut doors marked, and almost always the honest count is two volumes: the shop floor and the stockroom.
