Every scenting chart you will be shown quotes coverage in square feet, and in a double-height kitchen experience centre that number is not merely imprecise - it is measuring the wrong thing entirely. Your floor plan has not changed. The quantity of air standing on top of it has doubled.

Will a scent machine still work with very high ceilings? Yes, provided you size it by cubic volume rather than floor area and mount it low. Height is not an obstacle in itself; it is simply more air. The failure mode is buying against a square-foot chart, because a plan that a chart calls a comfortable one-machine showroom can hold nearly twice the air once the ceiling goes from three metres to six. Do the arithmetic before you do anything else, and you will not be surprised later.
How do I work out the cubic volume? Two steps, both on the back of an envelope. Divide the floor area in square feet by 10.76 to get square metres, then multiply by the ceiling height in metres. An 1,800 sq ft showroom is about 167m². At an ordinary 3m ceiling that is roughly 501m³ - half of what one machine is rated for. Give the same 1,800 sq ft a 6m double-height volume and it becomes about 1,002m³, which is the whole rating from an identical floor plan.
Where should the machine go in a tall room?Low. About a metre off the floor, never mounted high on the wall and never at the level of a mezzanine rail. Do the cubic arithmetic first

Measure the ceiling before you read a single coverage chart. Divide the floor area in square feet by 10.76 for square metres, multiply by the height in metres, and you have the number that matters. An 1,800 sq ft showroom is about 167m²: at 3m that is roughly 501m³, and at 6m about 1,002m³. One of those rooms is comfortably inside a single machine's range and the other is at its ceiling, and no square-foot table will ever tell you which one you have. Where the plan is only partly double height, work it out in sections and add them - a 6m atrium over 700 sq ft plus 3m over the rest comes to about 697m³, which is a very different conversation.
Tip: Write the ceiling height on the floor plan. Nobody else will have.

Warm air rises and it does not ask your permission
In a tall room the air stratifies: warmer air collects near the roof and cooler air sits where people are. Fragrance released high goes up with the warm layer and stays in the four or five metres of volume no customer will ever occupy. So the machine goes roughly a metre off the floor, on the display floor's air path, downstream of a supply grille and away from any return. This runs directly against the instinct to mount high for even coverage, and the instinct is wrong here. You are not trying to rain fragrance down on the room; you are releasing it where people breathe and letting convection lift it, which happens whether you plan for it or not.
Tip: A mezzanine rail is the worst mounting position in a double-height showroom.

How a tall building moves its air is an engineer's problem
A double-height space behaves differently from a flat one in ways that are genuinely an engineering matter. Whether your air handling was designed with destratification in mind, how far the diffusers throw, whether the returns sit high or low in a tall volume, what happens to conditioned air in an atrium in the middle of a Pune summer - those are questions for the HVAC contractor or consulting engineer who commissioned the system. I can tell you to mount low and size cubically; I cannot tell you how your building's air is meant to circulate. Ask them, get it in writing, and treat any scenting supplier who answers confidently as someone working outside their trade.
