The honest caveat: only one row here is a clear yes, and that is a small answer from a five-bottle range. At Versailles we were taught to describe a material along several independent axes at once — is it warm, is it sweet, is it dry, is it dense — and the exercise that stayed with me was being handed cedar and vanilla on separate strips and asked to say which was warmer. Almost everyone said vanilla, because vanilla is sweet and we had learned to hear those as the same word. Cedar is arguably the warmer of the two and it has no sugar in it whatsoever. Once a nose separates those axes it cannot put them back together.
