Frying does not simply release a smell into the air. Hot oil breaks up into an aerosol - microscopic droplets of cooking fat, carried up on the steam and the convection current rising off the pan - and those droplets travel wherever the air travels. In an open-plan home the air travels straight into the living room, because there is nothing in the way. The droplets are far too small to see and far too light to fall like crumbs, so they drift until they meet something cool or something soft, and then they stay there. Curtains, sofa fabric, cushion covers, throws, rugs, dining chair upholstery, and a thin invisible film on walls, ceilings and cabinet fronts. That film is the entire story. By the time you sit down after dinner the air itself has largely cleared, and the smell is still in the room because it is no longer in the air at all. It is on the textiles, re-releasing slowly for hours. Which reframes the whole problem: you are not trying to clear a smell out of the air, you are trying to stop an oily aerosol landing on soft furnishings, and then removing what already landed. So the sequence that actually works is boring, free and in a fixed order. When the extraction runs

Most people switch the chimney on when they notice a smell, which is already too late - by then the aerosol is in the room and heading for the sofa. Switch it on before the pan gets hot, so the rising column of air is captured from the first second. Then leave it running 15 to 20 minutes after you finish, because hot oil, a hot pan and a hot hob keep releasing long after the flame is off, and that tail end is what people miss. While you are at it, check the two things that quietly ruin an expensive chimney: a saturated grease filter, which needs degreasing every few weeks in an Indian kitchen, and a recirculating unit with an exhausted carbon cartridge, which is filtering nothing at all. A ducted chimney that vents outside beats a recirculating one for this job, every time.

Which way the air is moving
Pull it away from the living room, never through it
Air moves from wherever it can get in to wherever it can get out, and in an open plan you decide that route without realising. If the only window open is the balcony door beside the sofa, you have just made the living room the exhaust path for your kitchen. Reverse it. Close the kitchen door if there is one. Open a window on the far side of the kitchen, ideally with a smaller opening on the living-room side, so the flow runs living room to kitchen to outside. Turn off the living-room ceiling fan while you cook - a fan is a very efficient way of pushing kitchen air into curtains and cushions. If the air-conditioning is running, keep the open-plan unit off or on low while the hob is on, because a wall unit blowing across the room mixes the aerosol through the whole floor instead of letting it be extracted.

What the oil has already landed on
Wipe the hard surfaces fresh, and launder the soft ones
Everything that reached the living room is now sitting as a film, and film has a shelf life. Fresh film lifts with warm water and a drop of dish soap. Weeks-old film has oxidised, gone sticky and yellow, and now needs a degreaser and real effort - which is why the cabinet fronts above a hob are the hardest surfaces in an Indian kitchen. So wipe the hob surround, the backsplash, the counters, the cabinet fronts and the dining table while they are still warm, and add the extractor hood itself and the wall behind the hob to the weekly list. For the soft things, work out which ones are actually holding the smell by pressing your face into them: cushion covers, throws and table linen go in the wash, rugs get vacuumed and aired outside, and the curtains nearest the kitchen want washing or dry-cleaning two or three times a year rather than never. Airing a room full of loaded fabric does very little; washing the fabric does almost all of it.
Tip: if it smells when you press your face into it, it needs washing, not fragrance.

We cook with high heat and a lot of oil, and we took down the wall that used to contain it. I love an open plan. I also know exactly what a Sunday of frying does to a pale sofa, because I have one.
