Sushi is the one restaurant type where I spend more of the call talking about drainage than about perfumery, and it is not because anything is wrong with the food. It is because the geometry is unusual: there is very little hot air to extract in this kitchen, and most of what can go wrong is wet, cold and located about a metre from where your guest is sitting.

The reason this cuisine sits apart from the rest of the family is that there is barely any hot extraction load to argue about. A sushi kitchen produces almost no continuous plume: the work is knife work, cold storage, rice, a little grilling, and the hood question that dominates a tandoor or a grill room simply is not the live issue. What replaces it is a set of problems that are cold, wet and unusually close to your guests. Cold-room doors cycle open every few minutes during prep, and warm room air condenses on cold surfaces inside. An ice well melts all evening and that melt water goes somewhere - usually a gully, sometimes a gully with a trap that has not been checked since the fit-out. There is trim and skin waste, there are boards, there are cloths, and there is a wet prep sink. And in this restaurant type, a good deal of that is inside the dining room, because the counter is the kitchen: there is often a sink and a floor drain within a metre or two of a seated guest. I do not know another room in this cluster where a working drain is part of the dining experience. Check the cold side first
Temperature and time are the variables, and both are logs rather than smells
Fish reads as fresh or not depending on how cold it has been kept and for how long, so the first thing to look at is the cold chain rather than the air: delivery temperatures on arrival, how long a box stands on a bench before it goes in, cold-room door discipline during prep, and whether the cold room is actually holding rather than merely running. Warm room air rushing in on every door cycle condenses on cold surfaces and gives you a wet interior that needs cleaning on a schedule. None of this is anything I sell, and all of it sits ahead of any fragrance decision in the order of work.
Tip: Keep the receiving log and the cold-room log on the same clipboard. Most of these conversations end there.

An ice well melts all evening, and the drain it feeds is inside your dining room
Trace every route water takes: the ice well's melt line, the wet prep sink, the counter hand sink, the floor gully under the counter and the trap beneath it. A trap that has dried out, or a gully that has not been lifted in months, is the single most common reason a clean sushi room still reads as fishy at the end of an evening - and because the counter is the kitchen, that drain is a metre from a seated guest. Add boards, cloths and the trim bin, which need an interval rather than a wipe. No fragrance we sell removes, cancels or covers any of this, and we sell no purifier and no deodoriser.

Measure the vestibule, the waiting area and the washroom lobby, add them up, and buy for that number rather than for the restaurant. Under about 750 sq ft the answer is a Sukoon at ₹1,899 or an ₹849 reed and a Vaayu would be the wrong buy. Place it inward of the door, upstream of the air coming in, low rather than high, out of the door's draught and out of any sightline from the counter. Sushi owners usually come to me with one of two sentences. Either they want a signature at the door, which is a reasonable ask and a small job, or they tell me the room reads fishy by the end of the evening and they would like something for it. The second sentence is the one I care about, and the answer is not a fragrance. In this kitchen there is hardly any hot air to extract, which means the usual hood and pressure conversation barely applies, and what is left is cold and wet: door cycles, melt water, boards, cloths, a trim bin and a gully. All of those are intervals somebody has to own.
The part that makes this restaurant type genuinely different is where those things sit. Your counter is your kitchen, so the hand sink and often a floor drain are inside the dining room, a metre or two from a paying guest.
