The supplier reaches for the small palette that has become shorthand for that region - coconut and frangipani for a beach, rose and oud for a palace, pine and smoke for a hill station, jasmine and sandalwood for the south. Every other property in that destination briefs a supplier the same way, and there are not many suppliers. Within a few years the destination has a default register, and a guest who travels has met it in four other hotels. At that point the fragrance is not communicating your building at all; it is communicating a category, and a category is the opposite of a sense of place. So where does sense of place actually come from? Four contributors, in order of strength. Materials come first, and they are the most underrated. Buildings smell of what they are made of: lime plaster, teak, rosewood, stone, coir matting, jute, old paper in a library, cotton and khadi, a leather chair, a garden that has just been watered, rain on hot laterite. Those smells are free, unrepeatable, and impossible for a competitor to buy. A property that has been over-scented has usually buried them, which is why heavily scented heritage hotels often feel less specific than plain ones. If your building has good materials, the most valuable thing you can do is set your register low enough for them to be perceptible. Food is second and is the strongest single signal in any hotel. A regional kitchen doing regional food, coffee or tea prepared a particular way, breakfast with local dishes on it - these are specific, warm, and unambiguous about where a guest is, and they are also the one input a guest will remember without being told to.
