Named materials, and what they actually are

Since the first lever is the one doing most of the work, it is worth saying what is behind the names rather than leaving them as decoration. Taif rose is grown in the highlands of western Arabia and is harvested by hand over a few weeks a year; it is spicier and less jammy than the roses most people know. Mysore sandalwood is the Indian santalum that made the word sandalwood mean anything at all — milky, dry, persistent. Kashmir saffron is the stigma of a crocus and is priced by weight against metals.
