The most common thing I am sent is a photograph of a beautiful dining room and a sentence that says it smells of yesterday's frying at eleven in the morning. The instinct is that the air needs something added to it. The air is not the problem - by eleven in the morning last night's air left the building hours ago, and what you are smelling is coming off the room itself.

Why does my restaurant still smell of cooking long after the kitchen closes? Because the odour is no longer floating in the air. During service, cooking oil leaves the pan as a fine aerosol, travels with the hot plume, and condenses onto every surface cooler than the plume - walls, the underside of the hood, ductwork, ceiling tiles, light fittings, curtains, banquette fabric and carpet. Those surfaces are now a reservoir, and they give the smell back slowly for hours. The air you are breathing at eleven in the morning is new air that has just picked up yesterday from the building.

So what actually fixes it? Two things, in this order. First, remove the reservoir: hood filters and the plenum behind them, the duct run, the walls and ceiling near the line, light fittings, and then the soft furnishings, which are the part everybody forgets. Second, move air through the room overnight, because re-release into still air is what builds the morning smell. Both of those are a cleaning schedule and a switch. Neither of them is a fragrance, and I sell no extractor and no deodoriser.

Where does fragrance come in, and what does it cost? Last, in the arrival only, and only once the room reads clean at eleven in the morning with nothing cooking. Then you size the non-dining envelope, not the restaurant: a 4,000 sq ft restaurant is routinely a 300 sq ft foyer and two washrooms. Short answer: because the odour is not still airborne. Why does a restaurant smell of cooking long after the kitchen has closed?
Because by the time you unlock in the morning, last night's air has gone and the smell is coming out of the building rather than sitting in it. Here is the mechanism in plain words. When oil is hot, a fraction of it leaves the pan as an aerosol so fine that it travels with the plume rather than falling. That plume rises, meets the hood, and whatever the hood does not capture carries on into the room. Every surface in that room is cooler than the plume, so the aerosol condenses onto the surface and stays there - the underside and interior of the hood, the filter frames, the plenum, the first metres of duct, the wall behind the line, ceiling tiles, the tops of light fittings, and then, further out, curtains, banquette fabric, table linen storage and carpet. That film is now a reservoir. It does not sit still: it releases slowly back into whatever air is passing, and it goes on doing it for hours, which is why an empty restaurant at eleven in the morning can smell more strongly than a busy one at nine at night. During service your extraction is running and the room is being flushed. Overnight nothing is running, so the reservoir releases into still air and the smell accumulates against the ceiling and in the fabrics until you open the door. So the fix has two halves and neither of them is a fragrance. The three places the reservoir hides

Grease does not distribute itself evenly. It collects where the plume slows, where the air turns a corner, and in anything porous. These are the three places I look first, in the order they usually matter.

Start where the plume slows down

The greasiest surface in your building is the one nobody sees. Filters get washed because they are visible and they lift out; the frames they sit in, the plenum behind them and the first stretch of duct beyond often do not, and that is where a decade can accumulate. Ask your team two questions: when were the filters last degreased, and when was the duct run last opened and cleaned through its access hatches. If the second question produces a silence, you have found the largest single reservoir in the building without spending anything. What that duct run needs, how often, and by whom is a matter for you, your kitchen consultant and your local authority rather than for a perfumer.
Tip: Run a gloved finger along the inside lip of the hood, above the filters. That is your whole diagnosis in one movement.

Then the hard surfaces the plume passes
Walls, ceiling tiles, light fittings and the tops of everything
Whatever the hood does not capture goes into the room, cools, and lands. It lands preferentially on the tops of things and on anything warm enough to attract air movement, which is why light fittings and the upper third of walls are so often the culprits in an open-kitchen room. Wiping the surfaces a guest can see does not touch this, because the film is above eye level and behind the pelmet. Porous ceiling tiles are the worst case: they hold the film inside the material rather than on it, and in some rooms the honest finding is that the tiles are replaced rather than cleaned. Put the high surfaces on a written interval, with a date against them.
Tip: Clean high to low, and do it on a day the kitchen is cold, so you are not re-depositing a fresh layer an hour later.

Then move air through the building overnight
Re-release into still air is what builds the morning smell
This is the half that costs nothing. During service your extract is running and the reservoir is being flushed as fast as it releases. At two in the morning nothing is running, so the same release accumulates into dead air, settles into fabric and greets you at the door. A written purge - extract and make-up air running for a set period after the kitchen is cold, and again before opening, with the dining room doors held open so the whole volume takes part - changes the morning smell more than any product on this site. It is a switch, a schedule and somebody's name against it. Whether your particular fan set can run unattended overnight is a question for whoever maintains it.

The question arrives as a fragrance question and it is not one. Somebody writes to say the room smells of cooking at eleven in the morning and asks which scent would help, and the honest reply is that the smell is not in the air they are standing in. It is on the walls, in the ducting, on the ceiling tiles and in the banquette fabric, and it is coming back out slowly, all night, into a building with nothing running. I have sat in that conversation and watched an operator's face when they realise the answer is a cleaning schedule. It is not the answer anyone wants from a perfumer, and it is the only one I have.

What I can tell you is why wiping down does not work. The film is above eye level and behind things: the inside of the hood, the plenum, the first metres of duct, the pelmets, the tops of the lights. It is also inside anything porous, which is why fabric and soft ceiling tiles are so often the last thing holding the smell after everything hard has been cleaned. Work high to low on a cold kitchen, put a date against each surface, and then give the building an overnight purge so that the re-release has somewhere to go instead of settling into the room. That second part costs nothing at all, and in most restaurants it is the single biggest change available.

On hardware I would rather undersell, and today I would rather sell you nothing.
