You have been asking for fresh and being handed fruit, and the reason is not that anybody misheard you. The two words were welded together on the shelf rather than in perfumery, and taking them apart again is a five-minute job that will change how you shop.
Quick answers — read this first
Where does freshness actually come from, if not from fruit? Three places, and they smell nothing like one another. Citrus is peel - bergamot, lemon, grapefruit - bitter and sharp and short-lived, because peel oil evaporates fast. Green is leaf and stem: galbanum, violet leaf, cardamom, things that read cool and slightly bitter rather than sweet. Aquatic is the marine idea, salt air and wet stone. Fruit is none of the three. Fruit is flesh, and flesh is sweet and round, which is the opposite of what freshness is built from. The two words got glued together by the shelf, not by the perfumery.

That brevity is the thing people mistake for weakness, when it is really just the nature of the material. Green notes are made from the parts of a plant that are not the flower and not the fruit: violet leaf, galbanum resin, tomato leaf, green cardamom. The commonest sentence in this postbag is I asked for something fresh and they gave me something fruity, and the reader usually adds that she assumed she was explaining it badly. She was not. Fresh and fruity have been sold as the same thing for so long that the words have stopped pulling apart in ordinary conversation, and a shop assistant reaching for the fresh shelf will in good faith hand you a raspberry over vanilla.
