This is the only vertical I write for where the building contains a room whose smell you have deliberately staged, and a room whose smell you are trying to design. Most owners assume those two ambitions have to be traded against each other. They do not - but the thing you trade is the schedule, not the strength.

The three things that make it work

None of the three is a fragrance decision. That is the point, and it is why turning the dial down never solves this.

Put distance between them
The machine goes upstream, the cooking goes downstream
Find where conditioned air enters your showroom and where it leaves. The machine belongs near the entry point, about a metre up, well away from the AC return; the demonstration kitchen belongs at the far end, on the extraction side. Air then travels showroom first, cooking second, out - rather than carrying fragrance through the room where you are cooking. A tissue held at a grille will show you the direction in ten seconds, and that is a better piece of evidence than any drawing. What the extraction itself needs to be - hood sizing, air change rates, make-up air - is a question for your HVAC contractor, and I will not pretend otherwise.
Tip: If the machine is closer to the hob than to the front door, it is in the wrong place.

Hang a door if you can
A boundary you can close is worth more than every setting on the dial
The single biggest difference between showrooms that manage this well and showrooms that fight it forever is whether the demonstration area has a real door. A closed door makes the demo kitchen a separate volume of air, which means the showroom profile stops at it and the cooking stops at it in the other direction. An open archway makes both rooms one volume, and in one volume there is no such thing as scenting half of it. If you are still at fit-out stage, this is the cheapest decision in this entire guide and the only one you cannot retrofit easily.

Run it on a schedule, not a compromise
Off before the demonstration, on again once the air has cleared
The machine runs low through trading hours on ordinary days and comes off entirely on demonstration days - before the cooking starts, not as it starts, so the existing fragrance has time to leave with the air. It goes back on only once the extraction has done its work and the room reads as neutral again. Switching it back on into cooking air produces a mixture, which is the exact thing you were trying to avoid. In practice most showrooms do this by hand and leave the app timer to look after normal days, because a demonstration schedule changes week to week and the timer blocks are 1h, 4h, 8h and 24h.
