An extract system fails quietly and nobody notices
The single most useful thing to understand about kitchen extract is that it fails silently. A mechanical extract system that has lost half its capacity looks identical to one working properly and sounds almost identical too, because the fan is still turning at the same speed - it is simply moving far less air. There is no alarm, no warning light and no complaint from the kitchen, who have adapted to their own environment. By the time a general manager is being told the lobby smells of the kitchen, the system may have been underperforming for a year. So the discipline here is periodic active checking rather than waiting for a symptom, and there are four things to check. Check one is make-up air, and it is first because it is the commonest fault and the least visible. Extraction is not a one-sided operation: for every cubic metre a hood pulls out, a cubic metre has to enter the kitchen from somewhere. If the designed supply is undersized, or the intake is blocked, or a damper is closed, or somebody sealed a louvre during a refurbishment, the fan runs against a closed system and moves a fraction of its rating. Worse, the air it does move has to come from somewhere, and it comes through the path of least resistance - which is the kitchen's own doors, drawing air in from the restaurant and the service corridor. That sounds harmless and is not, because the airflow through those doors is turbulent and two-directional, and cooking air escapes on the return stroke. A kitchen starved of make-up air is a kitchen that leaks. Check two is grease filters, and they do two bad things when they are loaded rather than one. They choke the flow, reducing extract capacity progressively and invisibly. And they become a source themselves, holding warm grease that continues to release into the kitchen and the duct. Both effects are cumulative and both are fixed by a cleaning schedule that runs on a calendar rather than on somebody's judgement of how dirty they look. The same applies to the duct itself, which needs periodic cleaning both for smell and for fire safety, and which is a specialist job rather than a housekeeping one. Check three is pressure direction, and this is the one you can do yourself in ten minutes with a tissue and no equipment. Walk every boundary in the chain - kitchen to restaurant, kitchen to service corridor, service corridor to back-of-house, back-of-house to the lift lobby and the core, restaurant to lobby - and at each door hold a tissue at the gap. Air should always move towards the kitchen and away from the guest. The kitchen should be negative relative to everything around it. The restaurant should be negative relative to the lobby. The service corridor should be negative relative to guest circulation. If any of those is reversed you have found a genuine cause, and the fix is a balancing exercise for whoever maintains your air handling rather than anything a housekeeping department can do. Do this at the busiest service of the day, not at three in the afternoon, because pressures change with the load. Check four is where the discharge lands, and this is the one that catches properties out after a renovation or a neighbouring development. A kitchen flue that terminates near an openable window, a light well, a courtyard, a terrace where guests sit, a balcony, or - worst of all - a fresh-air intake, is putting the kitchen straight back into the building. This produces a signature pattern: rooms or spaces on one elevation that go bad within an hour of being aired, which is the opposite of what a housekeeping fault looks like. It also explains problems that appear seasonally with the prevailing wind. This is a building matter and it needs a building answer - extending the flue, relocating the termination, or in some cases changing which rooms are sold. There is no housekeeping routine and no fragrance product that addresses it, and it is worth identifying early rather than spending two years treating the symptom. Beyond the kitchen, the same logic applies to the rest of back-of-house. Linen rooms, chute collection points, waste stores and dish areas all need their own extraction, and they need it at the source rather than at the top of a riser. A waste store without extraction and with a door onto a service corridor is a permanent input to the service core, and the service core is connected to your guest lift lobbies. Wet items should not stand overnight anywhere. Doors between back-of-house and guest circulation should close, and a door held open by a wedge is a permanent opening rather than an occasional one. Now the rule that is absolute, and we would rather state it than sell into it. Never scent a kitchen or a pantry, at any level, for any reason. And do not scent service areas, linen rooms, waste stores, staff corridors or utility spaces either. Three reasons. Fragrance does not remove a smell, it combines with it, and the combination is worse than either alone. A scented back-of-house area exports through exactly the same routes as the smell you were trying to cover, so you have doubled the problem rather than solved it. And staff are in those spaces for eight or nine hours with no ability to leave, which makes them the least tolerant population in the building and the one least able to complain about it. Extraction, dry storage, closed doors and a cleaning schedule are what those spaces get. Guest-facing fragrance goes in only after all of this is right, in the correct order of work: ventilation, moisture, housekeeping and laundry, and fragrance fourth. At that point it is cheap, because a building that is functioning needs very little. Keep one register across the property and vary only the level, since a change of level reads as the building quietening while a change of register reads as a fault.
