What if the restaurant is open to the lobby? Then you cannot fully separate them, and the answer is a stronger kitchen boundary, harder extraction, and a lobby set lower than you would otherwise choose.
Four paths, and all four are openings
The framing that makes this solvable is that breakfast does not drift. Air moves from higher pressure to lower pressure through openings, so if breakfast is in your lobby it is being pushed there, through a small number of paths you can identify and mostly close. Once you stop thinking about it as an atmosphere and start thinking about it as a flow with a direction, the fix becomes an engineering conversation rather than a purchasing one. Path one is the restaurant doors. Almost every property has doors between restaurant and lobby, and almost every property props them open during service, because trolleys are moving, staff are carrying, and a closed door looks unwelcoming at the exact hour when guests are arriving. That is a real operational tension and it is worth solving properly rather than pretending: a held-open door for three hours is the largest single opening in the system. Options are a door that closes itself and is easy to push, a second set of doors making an air lock, or a service route that does not use the guest doors. Path two is that there is no door, because the restaurant is open to the lobby. This is the standard boutique arrangement and it is why small properties suffer from this problem far more than large ones. If the two rooms are one room, you are not going to separate them, and the honest answer is that your lobby will carry breakfast for two hours a day. What you can do is make the kitchen boundary much stronger, extract much harder, and accept that the lobby's fragrance setting should be lower than it would otherwise be, because you have a strong competing input at a predictable hour and adding to it produces a mixture rather than a masking. Path three is the kitchen's own door to the service corridor, which is the path people forget because it goes the wrong way. The kitchen vents into the back of house, the back of house connects to the service core, the service core connects to the lift lobby and the stairs, and breakfast arrives in the front of house having taken the long way round. A kitchen should be under negative pressure relative to everything around it, which means its extraction should exceed its supply so air always moves into the kitchen rather than out of it. If the kitchen is pushing air out through its doors, the extraction is undersized, the filters are blocked, or - most often - there is not enough make-up air, so the extract fan cannot move what it is rated to move. That last one is extremely common and is invisible without measurement. Path four is the lift shaft and the stairwell, which are the strongest vertical paths in any building. A ground-floor restaurant feeds the ground-floor lift lobby, the lift lobby feeds the shaft, and the shaft delivers to every landing above it. Properties often discover food notes on the fourth or eighth floor and search those floors for a cause, when the cause is at ground level. The diagnostic is simple: if it is on several floors at once and it is worst at breakfast time, look downward. So the working sequence. Get the kitchen genuinely negative and confirm it with a tissue at the door rather than assuming it. Check the make-up air, because extraction without supply is a fan making a noise. Run extraction at service capacity during service and for a period afterwards, rather than on a comfort setting. Fix or replace the door arrangement between restaurant and lobby, and stop propping it. Manage the service corridor door as a real boundary. Clean grease filters on a schedule, since a loaded filter both reduces flow and becomes a source in its own right. And time the clear-down: chafing dishes, the buffet line and food waste continue producing until they are removed, so a line cleared at ten-thirty is a lobby that is clean by eleven, and a line cleared at eleven-thirty is a lobby that is not. Then the part we would rather say than sell around. Do not raise your lobby fragrance to cover breakfast. Fragrance does not mask an existing smell, it combines with it, and the result is worse than either alone - a lobby that smells of coffee and cedar simultaneously is a worse room than one that smells of coffee, and it also carries the message that somebody knew and chose to cover it. Worse, the increase you make at nine in the morning stays in place at nine in the evening, when there is no breakfast to justify it, and you have permanently over-set your most important room. If anything, a property with an open-plan restaurant should run its lobby lower than average, not higher. The lobby is the highest zone in a hotel and highest still means low: the test is deniability, meaning that if a guest could accurately describe your fragrance after a stay, it was too high. Keep one register throughout the property and vary only the level, because a change of level reads as the building quietening while a change of register reads as a fault.
