Reading three: existing smell, taken from the building's age and its services layout. This is the reading that decides how much to add at all, and it is the one most often skipped. A genuinely old showroom - the same premises for forty or sixty years - has an accumulated base of waxed timber, aged stone, decades of textile, old paper and long-polished brass, and the job there is to extend it and add very little, because a strong register over an accumulated one produces two smells competing rather than one coherent room.
