When someone tells me a car spray gives them a headache, the culprit is almost always the same: alcohol. It is worth understanding why, because once you do, the whole regular-versus-gentle question answers itself.
Why alcohol is in most sprays
Most regular car sprays use alcohol as the solvent - the liquid that dissolves the fragrance oils and lets them mist out of a nozzle. It is cheap and it evaporates fast, which is exactly why it is popular and exactly why it can bother you. In a sealed cabin the alcohol flashes off first, so the first thing your nose meets is the solvent, not the scent.
Now add Indian heat to that. A parked dashboard can reach sixty-five to seventy degrees in summer sun, and that heat speeds evaporation. In a closed, hot, AC-recirculated cabin, an alcohol spray delivers its sharpest, most solvent-forward version right when you climb in. That is the sting. It is not your imagination, and it is not the scent being too strong - it is the carrier doing what a carrier does.

"Gentle" gets used loosely in fragrance marketing, so let me be precise about what it should and should not mean - including where I think the word gets oversold.

Alcohol-free, so no sting
The first and biggest part of gentle is simply the absence of the solvent that stings. Every SOSA spray is alcohol-free, phthalate-free, paraben-free, zero ppm formaldehyde and IFRA-compliant. That is what makes a sealed cabin tolerable, even windows-up with the AC recirculating.
